Paige Schmidt | Cappuccino

Ah, I am sitting at Kraken Coffee Co. in Avila Beach right now sipping this cappuccino and working with Karly. You guys need to meet Karly! She is in charge of all things Instagram (and more!) for Finally Free. She’s visiting from Indiana and I couldn’t be happier to have her here! The only thing that would make it better is if Sim were here with us – miss you Sim! We’re working on our fall launch (can’t wait!) and creating some new amazing things for you all!


Today I am sharing eats from Wednesday and Thursday. Before we dive in, I want to remind us all that these posts are not for comparison, to tell you what to eat, or when to eat it. Rather, these posts are here to inspire you, give you meal ideas, and encourage you to give yourself permission to listen to your body.

Your body is brilliant – trust her needs today! I just had a client share with me “I am never disappointed when I listen to my body.” So true – I relate!

WEDNESDAY

Paige Schmidt | Scramble

Wednesday was a client workday! It started out with blogging and breakfast with Marco before I dove into sessions for the day. I made us a scramble with eggs, chicken (leftover from the previous nights dinner), asparagus (also leftover), and mozzarella cheese. We threw some hot sauce on top and called it a great meal (it was really good!).

Paige Schmidt | Toast With Tuna And Arugula

For lunch we had two slices of brown rice toast with tuna & arugula on top. This was the perfect quick and filling lunch during a busy day!

Paige Schmidt | Smoothie

Mid-day I wanted a bit of a pick me up so I made a smoothie with banana, raw cacao, spinach, peanut butter, chia seeds and milk. Mmm, so good! I sipped this through my afternoon client sessions.

Paige Schmidt | The Range | Santa Margarita

For dinner Marco and I went to The Range in Santa Margarita to celebrate our THREE YEAR (yay!) wedding anniversary. This is our favorite restaurant and we usually save it for special occasions. It’s SO good and they’re only open a few hours in the evenings. The food is incredible and the chef is well known in the area. We started with bread (side note: I love how they gave us two of each, it’s no fun when there’s an odd number – haha!) and then moved on to an amazing dinner…

Paige Schmidt | The Range | Santa Margarita

For dinner I ordered the beef brisket with vegetables and mashed potatoes. Holy yum. This was so good! When I was choosing what to order I just imagined the beef brisket sauce with mashed potatoes and was sold. I mean… it sounded amazing! It was!

THURSDAY

Paige Schmidt | Eggs and Toast

Thursday morning started off with early morning work at home and a meeting with Simi for Finally Free. Right before we hopped on the call I had breakfast with M which was two eggs with brown rice toast. Easy breezy!

Paige Schmidt | Asparagus And Parmesan

For lunch, I didn’t have much of a lunch… I just threw together what I could find in the fridge. We had leftover asparagus that I wanted to use up so I paired that with some parmesan and called it… a snack?

Before I left for an afternoon grocery trip I made a quick smoothie to take with me. I knew that asparagus wouldn’t hold me over long – ha! Same smoothie as yesterday!

After work I set up the office for Karly’s stay and rested with Marco until we left to pick her up from the airport. Right before we left I grabbed a quick dark chocolate PB cup to cure my sweet craving. Totally hit the spot!

Paige Schmidt | Clam Chowder

When we got to the airport we learned that Karly’s flight was about half an hour late so we walked over to the little restaurant on site and shared a bowl of clam chowder. It was just okay! If I were going out for good clam chowder I’d go to either Splash Cafe in SLO or Pismo or Mersea’s in Avila. Both places are amazing!

Karly landed just before 8:00 (yay!) and we headed over to our friends John & Asia’s place for taco night.

We had a blast at John and Asia’s as we always do with John’s wildly-fun energy (always entertaining us, John!) and being together. Our taco’s were beef on cauliflower tortillas which our friend Haley made (thanks Haley!), lettuce, cheese, tomato, and sour cream.

Haley said I could share how she makes them! We eat them in a fork, tostada style. Here’s how to make ’em:

  • Mix a full bag of Trader Joe’s riced cauliflower (or you can grind up your own cauliflower – Costco has bigger bags of it too), about 5 eggs, some tapioca flour (1-2 tablespoons), 1/4 cup (ish) of coconut flour, and a little salt and garlic powder and cook them like pancakes (I usually just add stuff until the consistency looks right).
  • If you’re more of an exact-recipe-er (admittedly, not me!) here’s a link that she said was really similar!

Alrighty, all! I am off to hang with Karly and work on Finally Free. I think we’re going to head to lunch on the pier in Avila beach for Mersea’s fish tacos and clam chowder (the best kind!). Have a great weekend and I’ll see you next week (or come say hi on Instagram @paigeschmidt)!
