Daily Eats: Our BYOB Event and The Best Bagel EVER
January 17, 2018
Good-morning!
Today I am sharing days 15-16 of eats with you from my January #31DaysofEats Challenge. If you’d like to share your eats along with me post them on Instagram (in your feed or story) and use the hashtag above. Make sure to tag @paigeschmidt so I can see/share your post and regram it in my story!
I’m doing this challenge for myself in a simple effort to share more daily intuitive/non-diet eats with all of you. These post are my *most* requested and the *most* missed when I don’t share them.
Before we dive in, I want to remind us all that these posts are not for comparison. Rather, these posts are here to provide you with inspiration for food ideas and to give YOU the freedom and permission to listen to YOUR BODY as I listen to mine, apart from food rules or dieting.
Thank you so much for being here and I hope you enjoy! Leave a comment when you finish reading!
Day 15
Monday morning started off with coffee and 15 minutes or so of weekend clean up. Marco and I were out most of the day Sunday so didn’t leave room to clean up after having my dad in town.
Once I cleaned up I showered and got dressed. It’s been awesome to post these photos because it’s kept me so mindful to pick out outfits (don’t be fooled they take me two minutes to pick out). If you read in one of my very first posts this year my goal was to post my outfits so I’d get dressed in real clothes (vs. workout clothes) each day.
After I got dressed I made a quick breakfast of two scrambled eggs and sourdough toast with hummus.
Then I grabbed my bags and walked to Ascendo coffee to meet Asia for some early morning coffee shop work.
She snapped a photo of me working on her way in. Asia, always with a camera! Love our work time together!
When I got home I had a two hour meeting with Simi to work on Finally Free Program. We’ve opened the doors again, all! And quite a few of you have been enjoying our free 30-Day Master Planner download.
Once we wrapped up our meeting I took a break and warmed up Pho from the weekend for lunch. I also had rice with Tamari (similar to soy sauce) on the side. So yum! We have so many leftovers, so prepare to see some Pho this week!
Post lunch I got back to work until about 2:00 when Marco got off work and then we went to the gym together. When I got home I was hungry and made this slice of toast with hummus. Back to work I went!
Once I closed up shop for the day (where I get my office back in order, clear off my desk, wrap up my to-do’s, clear my inbox) I headed to the kitchen to make dinner. Before I started cooking I had a few crackers and hummus to calm my appetite.
For dinner I made some gluten free eggs noodles with cashew pesto, leftover procuitto I had in the fridge and fresh cherry tomatoes. Yum! The tomatoes and pesto together tasted so good!
Day 16
Tuesday morning I woke up, showered and got ready for the day and headed over to my friend Natalie’s house for bible study with my girl friends.
At bible study (we’re going through Shauna Niequist’s Present Over Perfect video series) I had a GoMacro bar and black coffee. Mmm! Natalie buys this Peet’s Coffee for her Keurig and it’s so good.
When I got home I made myself some breakfast: two slices of multi-grain brown rice toast with cashew pesto, hummus, and a boiled egg (on each), sprinkled with Everything But the Bagel seasoning. Soooo good. Definitely repeating this again today – can’t wait!
After breakfast my morning client sessions started. I worked until about 12:30 with clients and then headed to a coffee shop to lunch/work with Asia before my evening sessions started. We went to Kruezburg and I got peppermint tea and…
…this bagel that was literally everything. I want this everyday and nothing else. SO good. It’s an everything bagel with cream cheese and super fresh tomato, cucumber, spring mix and avocado. Seriously, THE BEST. Like, might have to get it again in the next couple days.
When we finished at Kruezburg I came home for a couple more sessions. In between, I had a this leftover pasta for a super quick dinner. I enjoyed it cold which was actually super yum.
I sipped Natural Calm through my sessions, which I find so soothing.
After my last session I hopped straight in my car and headed to Chamisal Vineyards for BYOB, an event I host with my friends Asia and Natalie. BYOB stands for Build Your Own Business and it’s the most awesome group of people who get together once per month and CRAZY inspire and uplift each other in our businesses.
My favorite thing about this meeting is the heavy brainstorming we do for each person and the encouragement that everyone leaves with. Comparison does not exist here, and that’s what I love most. Ah, these nights get me so FILLED up.
I hope you all enjoyed these eats! I’ll be back on Friday with two more days of eats. For now, share with me… What are your favorite bagel toppings? Because clearly I need to be making more bagels with incredible toppings like Kruezburg made me. Share in the comments!
Love you all 🙂
