Daily Eats: Purple on My Nails, Quiet Time in My Morning, Joy in My Heart

Good-morning!

Today I am sharing days 29-30 of eats with you from my January #31DaysofEats Challenge. This is my final post of this series! Day 31, today, will be posted over on Instagram @paigeschmidt. I’ll make an effort to continue sharing daily eats there. I’ll continue to share eats on the blog, just not daily.

I need room for other posts 😉 Friday I am going to discuss the idea that many of us have (or have had) that being thin will make us happy, and whether or not I believe it’s true (I bet you can guess my answer and I’m excited to share my thoughts on this with you!).

Before we dive in, I want to remind us all that these posts are not for comparison. Rather, these posts are here to provide you with inspiration for food ideas and to give YOU the freedom and permission to listen to YOUR BODY as I listen to mine, apart from food rules or dieting.

Day 29

Toasted Sprouted Bagel with Kite Hill Cream Cheese, Tomato and Sliced Hard Boiled Egg. The Perfect Savory Breakfast.

Monday morning started off with quiet time and blogging about the rest of our Reno-Tahoe trip. This breakfast followed: a toasted sprouted bagel with Kite Hill cream cheese, tomato and hard boiled egg (sliced).

After breakfast I got dressed and had a meeting with Karly, who helps with a lot of stuff that goes on around here and over in Finally Free Program! That meeting was followed by a Podcast interview that I can’t wait to share with you guys this Spring!

An Intentional Act of Self Care: Getting Your Nails Done. A Special Way to Feel Calm and Taken Care of.

After my meetings I ran to Trader Joe’s and Whole Foods to grocery shop. I dropped food off at home and headed out to get my nails done. This was a very intentional act of self care. I needed something special and relaxing that was just for me. I needed to feel taken care of.

Can I just say that this is one of my favorite self-care activities? Having my nails done feels so special. Maybe it’s because I don’t do it often. I love looking down and seeing pretty, brightly colored manicured hands. It feels so nice and I love picking my color based on how I want to feel.

This week I chose purple because it felt calming to me. Light purple also reminds me of my mama because it’s the color of one of her favorite nightgowns and the color of one of her favorite jackets. That sweet mama of mine – ah, how I miss her so.

After I got my nails done I came home, did a little more work, cleaned up the house and made lunch. Lunch was so good! Lemme tell you about it…

It’s flatbread with pre-cut gyro strips from Trader Joe’s, spinach, red bell pepper, tomato, red onion, two heaping spoonfuls of TJ’s tzatziki (which I could literally drink from the carton it’s SO GOOD) and goat cheese. SOOOOO GOOD.

After lunch I woke Marco up (he fell asleep after work, he was so tired!) and we went to Costco and washed the truck (soooo dirty from Tahoe!). After our errands I went to the gym and he rested. Then I came home and made a YUMMY dinner.

Dinner: brown rice with sautéed garlic chicken (I sautéed cubed chicken thighs in olive oil and LOTS of fresh chopped garlic with salt, pepper, and 21 Seasoning Salute) and roasted brussel sprouts. Yummm.

For the brussels: I cut fresh brussels in half, tossed them in olive oil, sprinkled them with sea-salt and baked them for about 25-30 minutes on 425 (the time is a guess, so don’t trust me on this one – check on your brussels as they cook!). Such a good combo! We drizzled Tamari over the top and voila. Delicious!

Day 30

Drool-Worthy Egg Scramble: Spinach, Red Bell Pepper, Onion, Brussels sprouts, and two eggs. Topped with Chives, Olive Tapenade and Hummus.

Ah, Tuesday was SUCH a good day. I felt awesome all day. I struggled with some anxiety over the weekend so I really appreciated that Tuesday felt so peaceful and calm.

The day started with quiet time and reading my bible, which felt amazing. I read James 2-3 and got so many nuggets of wisdom to carry through my day.

For breakfast I had a scramble with: spinach, red bell pepper, onion, Brussels sprouts, and two eggs. I topped it with chives and on the side I had olive tapenade and hummus. Yummmm. Mouth drool. So good! I think I’ll repeat this today!

After quiet time I checked email, made breakfast (above), went to the gym, came home, showered and got dressed, and then started with clients.

My Go-To Lunch from Trader Joe's: Flatbread with Pre-Cut Gyro Strips, Spinach, Red Bell Pepper, Tomato, Red Onion, Tzatziki, and Goat Cheese.

I worked through the morning with clients and then took a quick break for lunch before running to meet a friend for work and coffee. I had another gyro wrap and it was sooo good. Same as the day before! Another new lunch favorite. So easy – takes me about 10 minutes to put together.

For coffee I met my friend Brittany at Scout. Brittany is a business coach for small business owners. She is awesome! We both got cappuccinos and ordered a cookie to share. I had a few nibbles and dang. Scout has their cookie recipe down! So great!

After coffee I headed back to my office to meet with my last two clients of the day. Ah, such good sessions. Gals, if you’re a client reading this… I appreciate you so much. My one on one time with you every other week is so special to me. You’re so open and loving and I could not appreciate you more.

My Go-To Snack: Peanut Butter Chocolate Chip GoMacro bar

After work I walked downtown to get my haircut from Lindsay Plough, who’s been doing my hair since we moved here. I went a little more beige blonde and added some layers and I LOVE IT! I shared it over on Instagram in my stories @paigeschmidt. I had a GoMacro bar while there.

When I got home from my hair appointment I heated up leftovers for Marco and I and mmm. So good. I love when food has sat for a day or so – the flavor is even better! We ended the night with a show in bed and an early (but normal) bedtime around 8:30. I love my sleep, friends!
