You guys loved the last “five days of eats” posts so much that I’m choosing to do more this week! Thank you for all of your sweet comments, I love hearing how many ideas you girls are getting for meals from these posts AND how they’re encouraging you to listen to your own bodies. YES!
Before we dive into to this massive daily eats post, I want to remind us that the purpose of sharing these posts is not for you to compare your eats to mine.
Rather, I do these posts to 1) encourage you to know that it is possible for you to listen to your body, forgo all forms of dieting, and feel great in your own skin and 2) show you that I walk my talk. My hope is for you to feel more freedom in your life because of these posts.
Breakfast – cappuccino and GoMacro bar (peanut butter chocolate chip)
Mid-morning snack – organic string cheese from TJ’s
Lunch – a small bowl of chicken chili topped with onions, avocado, sour cream, and pepper + a side of black bean and quinoa chips (these are my favorite chips by far!)
Dinner – for dinner I had planned to make traditional nachos, however, when I opened the fridge and saw that I had two zucchinis that needed to be used I decided to make “zucchini nacho’s” instead. These didn’t taste like nacho’s, but were still good! I ate them with a fork.
Layered: sliced and sautéed zucchini, cooked onions, ground chicken, cheddar cheese, salsa, and guacamole and sour cream mixed together (they’re better separate – I was clearly in an experimenting mood, haha).
Dessert – a few squares of dark dark chocolate with PB on top + a frozen banana with more PB
Breakfast – two eggs and toast + coffee with whole milk
Mid-morning snack – a string cheese and Marco in the background 🙂
Lunch – a southwestern salad from Firestone. One of my FAVORITE salads (in fact, just writing this post is making me crave one). We always order a side of fries to share as well, and ask them to add a couple of onion rings to the mix. So, we each get two. My favorite treat!
Salad ingredients: romaine, chicken, avocado, red bell pepper, black beans, red onion, corn, and southwestern dressing (basically like a spicy ranch). This would be a great one to remake at home if you’re looking for ideas this week!
Marco’s cousins were in town this weekend, so for dinner we landed ourselves at a new ramen/sushi place in Los Osos (one town over from where we live). Marco and I 🙂
Dinner – I got a pork base ramen bowl with beef (mixing it up). It was delicious, and so comforting. It was raining this evening, and we were all so hungry, so basically this bowl was heaven. Marco and I also shared a California roll on the side.
Breakfast – This day started off with eggs and toast that I made for Marco, myself, and his cousins. I forgot to take a photo amongst the hosting. Whoops!
Lunch – for lunch we went to Splash Cafe in SLO, known for their clam chowder. Yum! Marco and I shared clam chowder and french fries. Such a perfectly satisfying lunch, and it felt great to split.
Dinner – for dinner Marco and I met up with a couple of our friends, Hannah and Dusty. We went to Milestone Tavern in SLO for dinner. It was deeeelicous. Hannah and I each got a dinner plate and then shared, so I had a bit of: fries, turkey sandwich, and salmon salad (not pictured).
Morning snack – this morning we woke up, got ready, and headed out the door for Church first thing. I wasn’t too hungry, but had half a bar to carry me through the morning.
Brunch – after Church we went to brunch with Marco’s cousins and our friends Chelsea and Mason. We went to Novo in SLO. It was my first time having their brunch, and holy cow… it was so good!
My order: a cappuccino + a turkey and avocado croissant-wich. AMAZING.
Brunch kept us full through the day. After brunch, we cleaned up the house, went grocery shopping, and got ourselves re-organzied after a weekend of fun. While at Trader Joe’s, I decided to add another meal to our meals that week because they had it out for a sample and Marco and I both liked it!
Dinner – caesar salad + pasta with chicken sausage and mascarpone cheese (I remade this later in the week with my own ingredients and enjoy sour cream added to pasta more than this sweet cheese – the sour cream makes it creamy without making it sweet). Marco LOVED this.
The simple TJ’s recipe was:
- 2 bags of frozen penne arrabbiata
- 1 tub of mascarpone cheese
- 1 pack of garlic chicken sausage
Morning coffee – This morning was a Monday and Asia and I met up for coffee at 6:30. We went to Ascendo and talked for a couple of hours (we can do that pretty easily!). We went over the notes from Church the day before, all about taking big risks. So relevant for me right now!
I had a GoMacro bar while here, along with a cappuccino.

Breakfast – when I got home from coffee I had breakfast with Marco. Two over-medium eggs all chopped up with a slice of multigrain toast
Snack – apple and PB (I’ve been loving and craving this lately)
I didn’t have lunch this day… I guess I just skipped over it amongst all of my work writing! But, I made up for it in snack hunger.
Snack – GoMacro bar with bulletproof coffee with Asia at her office
I was definitely in the mood for a lot of yummy drinks this day. I went on a short photoshoot with Asia this day and took a Kombucha for the road. I love this one SO much. Any of you tried it?
Dinner – CrockPot chai tea brisket and roasted carrots (really not the prettiest – look at the recipe I linked to, to see how much prettier this can be, haha!)
Snack – a few crackers and cheese
Late night hunger – at about 9:00 I noticed I was still hungry. Dinner didn’t do it for me. So, I reheated a small bowl of chili with avocado and sour cream on top. THIS did the trick.
