A Tribute to My Favorite Food: Nacho’s

Can anyone relate to feeling guilty around Nacho’s? I don’t know about you, but back in my dieting days I used to feel SO guilty eating Nacho’s. These were a “binge food” for me, for sure, meaning… I would either eat them ALL, or not eat them at all. Somewhere along the way I had made myself believe that this food was “bad” and I “shouldn’t” eat it if I wanted to have a “healthy day.” Even one bite would screw me up and I’d “give-up” and “throw in the towel.” Relate? Anyone?

Well, I’m here to share with you today that now, this is one of my FAVORITE foods and I enjoy it often for dinner without an ounce of shame! Nacho’s are not bad. In fact, they’re quite good! They leave me feeling satisfied, they’re fun, they’re a food the whole fam loves, and you get such variety with this food. I just love em’!

The difference? Before, I’d tip over the huge costco bag of tortilla chips onto a huge plate, grab a big handful of mexican cheese, and frantically throw the plate in the microwave. I’d eat the nachos standing at the counter (with myself or with one friend in particular who loved this binge food as much as I did). I’d finish the plate quickly, and before I was even done, I’d be onto thinking about the next food I could fit in (as quickly as possible) before I would notice my fulness. The goal was to get it ALL in NOW so that I could be better tomorrow. The hope for today was already gone, so why not just go for it?

NOW, I put just enough chips on the plate so that each one can be fully loaded. Because, who likes an empty Nacho chip?! Those are the worst, haha! I spend a little bit more time putting the plate together. I pull out any and all ingredients that sound good, and I take the time to really make the best nacho’s ever. Because, why would I want to eat anything different? “If you’re going to eat it, you may as well really enjoy it!” is what I always say to myself :). ENJOY your Nacho’s without shame ladies! Have them for dinner! It feels fun, a little bit “bad” (even though it’s NOT!), and if you take your time & eat them with total GUSTO, you could possibly knock out the fear around them.

Nacho’s with Tofu & Black Beans:

  • Organic white corn tortilla chips
  • Tofu (one large block) scrambled with taco seasoning & heated with 2 cans of rinsed and drained black beans
  • Mozzarella cheese
  • Jalapeños
  • Avocado
  • Organic sour cream
  • Salsa verde (green)

Nacho’s Before Dinner:

  • A few Organic white corn tortilla chips
  • Mozzarella cheese
  • A little bit of leftover steak
  • A jalapeño on each chip
  • Organic sour cream
  • Salsa verde

Fun, right?! This is for those times when dinner is over an hour away, you know you’re not having Nacho’s (something else is planned) but a craving hits and you need a little tide me over snack. Instead of ruining your entire appetite and eating everything in your cupboard (while standing in the kitchen), give yourself permission to make a mini plate of nacho’s, fully enjoy each bite, wash your dish, and then walk away and do something else. It doesn’t have to be so hard.

Nacho’s with Steak:

  • Organic white corn tortilla chips
  • Skirt steak (leftover from your burrito dinner, of course)
  • Black beans (rinsed & drained)
  • Organic jack & cheddar cheese
  • Cilantro
  • Jalapeños
  • Pico de gallo (fresh is the best!)
  • Organic sour cream

Okay, this food is just too fun! I love it so much, and no longer have ANY fear around it. It’s a regular part of my eats whenever it sounds good. Remember in my Video from last Friday (see it HERE) when I said you need to be able to eat ANY food that you really want in order to stop bingeing? It’s REALLY true. If I did not allow myself to have Nacho’s still to this day, I guarantee you I would STILL binge on them, because I truly love this food & see it is as such a fun food. There are NO foods that are off limits for me now (unless of course I physically could not eat them, which in my case, doesn’t exist).
