Morning darlin’s. I’m here with more daily eats and this is a BIG ONE. I’ve been sticking to my plan of taking photos (finally – it was hard to get back into the habit of this after not doing it for a while!). Now I’m thinking I don’t want to break this pattern. Ha! Before we dive in, I just want to say that these posts are NOT for comparison (if these posts are triggering for you in anyway, scroll THESE posts instead).
I share my eats in hopes that you’d leave here today feeling inspired and full of PERMISSION to listen to YOUR BODY, as I listen to mine. I hope these posts fill you with the FAITH you need to let go of ALL food rules/control (just as I have!).
ALSO, I am not 100% confident that I photographed EVERYTHING I ate. There were times where I had a few pieces of cheese/crackers that were not photographed, a couple chips here and there, etc… So just know, this is not a black and white “this is what I ate post.” These are just the main meals.
Thursday morning started off with a breakfast burrito – yum! Eggs, bacon, potatoes, cheddar cheese, and homemade salsa wrapped in a warm tortilla. When we do Sunday brunches, the food lasts me into the week. It’s awesome!
Lunch was leftover chili (again with the leftovers – I intentionally always make extra!) with a side of cottage cheese and Fritos that I didn’t finish. Dumped the Fritos back in the bag. The chili was awesome and just enough! Here’s the link to the chili recipe.
For dinner I made salmon (cooked with olive oil, salt, pepper, garlic and a little bit of oregano – so good!), rice, and avocado. I wish I could say that those veggies were good but they were not, so I threw them out. I had some bad brussels sprouts in there that ruined the whole batch. Darn!
Friday morning I had two eggs over-medium chopped up into a million pieces and two small slices of sourdough, toasted, with Kerrygold butter. Mmm-mmm good!
Lunch was leftover salmon, avocado, and rice with Tamari (a wheat free soy sauce that I tend to opt-for whenever it’s available) and sriracha. Yum!
Dinner was butternut squash raviolis with leftover salmon. Are you starting to sense how much you can do with leftovers? And how easy it makes eating at home during the week! You definitely do not have to cook a fresh meal each time you eat. Just re-purpose leftovers!
Saturday morning started off with eggs and toast that I took upstairs with me and nibbled on while I got ready to grab coffee with my friend Shannon.
She picked me up and we went to Hub coffee where I got a cappuccino. So good, and soooo cozy. Saturday was the first big snow of the season. I’ve never lived anywhere where it’s snowed, so this was sooo special for me.
I took and shared about a-zillion photos because I was so excited. Ah, I’m loving this snow! I just have to be extra conscious to get out of the house more because it is pretty gloomy and grey outside. I can see why people have seasonal mood swings. Trying to be extra aware of this.
When I got home I nibbled on the last of the butternut squash ravioli and met up with my friend Nichole. We ran errands together (TJ’s, Petco, Barnes and Nobles, and Target) and got Razor scooters while we were out. SO fun! We rode them around the neighborhood when we got home and goofed off. So great to have a friend who will ride scooters with me 😉
After our shopping spree we came back to my house, snacked on a few pretzels and then went to sushi with our friend Bob. He’s always down for sushi! I didn’t take many photos there, but I had lots of nigiri (salmon and tuna) and seaweed salad, cucumber salad, and miso soup, plus a few bites of other appetizers we ordered. Yum!
Sunday morning started off with Church with friends (I had a GoMacro bar on the way to Church). After Church we all met up at our house and made Sunday brunch. Breakfast burritos and mimosa’s. Yum!
Throughout the day I had MAJOR cramps so after my friends left I spent a little time cleaning and then napped before the movies with girlfriends.
Right before the movies I had a couple pieces of cheese with salami and that did the trick to hold me over. At the movies I had a glass of wine and was happy as a clam. We watched “Instant Family” which I later told Marco was my favorite movie! I thought it was SO good! Have any of you seen it?
When I got home I had a super late dinner of tortellini, ground beef, cheese, and a side of cherry tomatoes. Such a random but delicious craving.
Monday morning started off with a leftover burrito and coffee, following quiet time.
For lunch, Marco and I ate the rest of the beef tortellini. Super simple and delicious!
I didn’t take a photo at dinner, but I went to a friends house, had a couple glasses of wine and a piece of stuffed chick with some kale salad. It was delicious! We spent the evening playing Monopoly and had a blast! I’m terrible at Monopoly.
Ha! Typically… great at budgeting but in a fake game, terrible. I was buying everything 😉
Tuesday was a BIG CLIENT DAY. I woke up, had breakfast, and got straight to work. Breakfast was the last of our Sunday breakfast burrito leftovers. Inside: eggs, bacon, potatoes, cheese, avocado and homemade salsa. Mmm!
Lunch was a quick half tuna sandwich (toasted) before I got back to work.
Dinner was so random. Sort-of planned, sort-of just whatever we had in the fridge. I took a plain bagel and made a panini with grilled turkey, mozzarella, pesto, tomato, and avocado. This did the trick!
After dinner I made hot cocoa and totally decompressed from the day. I watched a dorky movie on Netflix (Christian Mingle) and cuddled with Abby.
Wednesday was another busy client day. I woke up, had quiet time, breakfast, went to the gym, and then got to work. Breakfast was two eggs scrambled on a piece of sourdough. Easy, satisfying, delicious!
Lunch was another half tuna sandwich, this time with Fritos on the side.
Dinner was rice, chicken, and broccoli with Tamara and sriracha. The only thing that could have made this better would have been avocado!
These bowls are one of my favorite simple dinners to make during the week. Marco and I super enjoyed this dinner and then watched Catastrophe on Amazon Prime. Anyone else watch this show? Cracks me up!
