An Easy To-Go Lunch
Pasta Salad!
Remember this food?
Welp, yesterday I threw together some things we had at the house, and came up with a Pasta Salad dish
- Leftover Brown Rice Pasta
- Olive Oil
- Apple Cider Vinegar
- Salt + Pepper
In the bean salad on top:
- Red Kidney Beans
- Garbanzo Beans
- Bruschetta
- Olives
- Green Onions
I mixed everything together and came up with this lovely little pasta salad that would be great on the go! It’s Vega, filling, healthy, and full of good stuff. I will be having this for lunch today, just like yesterday! Repeat!
Speaking of repeat, this morning for breakfast I am having a repeat of yesterdays Overnight Oats with a little toss-up. Pecans instead of Almonds. Little switches you can do make such a good variety in our favorite foods. You can even switch between almond milk, soy milk, and rice milk in your ONO’s. Or switch between almond butter, peanut butter, or cashew butter. Think of whole foods as having variety. Think of each food as offering a different nutritious benefit, and switch things up every few days. Variety is good! Variety = moderation.
Dinner
Dinner last night was a very different, delicious salad with a potato and veggies with it
In my salad:
- Spinach
- Shredded Carrot
- Shredded Cabbage
- Toasted Pecans
- Spicy Peanut Thai Dressing (TJ’s)
I love Trader Joe’s salad dressings because they offer so many that arn’t packed with calories, but that add healthy nutrition to our diet! Plus, lot’s of flavor!
For the potato, my brother baked them brushed with olive oil and sprinkled with sea-salt
On top, I added sauteéd:
- Onion
- Spinach
- Bell Pepper
- Mushroom
This was sooooo good. Marco tried to steal a mushroom, and I grabbed my plate away. He gave me a super sad puppy face… so I let him have some… 😉
And last but not least, a little inspiration. The Library! Did we forget about this place? I’m going to be totally honest and say I did. When I got home yesterday, my brothers girlfriend, Haley, was studying tons of health books and taking notes. She is starting a program called “Turbo Fire.” I love how she educates herself, and I love even more that she does it from the library! Now, instead of going into a tough program without ideas, she has ton’s of recipes, ideas, and tips that are going to encourage her to be successful in a program that she is determined in. Now she doesn’t have to worry about feeling lost, because she’s done her research!
