Apple Crisp

This morning, I woke up and split my Overnight Oats into two little bowls. I shared with Aubrey and Tyeson. I think we are going to start splitting Oats from now on so that everyone can start their morning healthy 🙂

  • 1/2 cup Oats
  • 1/2 cup Vanilla Almond Milk (+ a little more in the morning to soften)
  • 1 tbsp. Chia Seeds
  • 1/2 banana (+ the other half split between two bowls for topping in the AM)
  • 1 tbsp. Peanut Butter
  • 1 tbsp. Coconut
  • 1 tbsp. Granola added in the morning

Mix everything together in a bowl and let sit overnight in the fridge. In the morning, split into bowls (or enjoy for yourself) and add your toppings. A little bit of extra milk may be added to help soften the Oats. Enjoy!

After my Oats, I cleaned up and went to the gym for a Body Works Class. Felt so good to be back!

When I came home, I put the Apple Crisp which Lindahale taught me to make in the oven and started the Coffee. While that was cooking I showered off and got dressed, and then my Mom came over for breakfast!

We each enjoyed our Apple Crisp and a cup of Coffee! Soo soo good! I wish I could share this recipe, but it was given to me as a gift from Linda. She does cooking classes and these recipes come with her classes normally. I wouldn’t feel right spreading it across the internet 😛

Now, I am babysitting and blogging. I just put little Harper down for her nap and heated up some Cheese & Broccoli Casserole that was in the fridge

I also snacked on this plate while watching little Harper, plus a small chocolate muffin. I am assuming everything is gluten-free bc Harpers Mom is a G-Free cook 🙂

I am reallllly craving some cardio about now. I’m not used to sitting so much. In San Fran we were walking a lot. Now being home, I’m realizing how much I drive places instead of walking! I need to get movin!
