Daily Eats
The struggle was so real today getting this post up. I guess Safari is having trouble in general? Anyone else? Anyway, I’m excited to bring you the last two days of eats per reader request! This is the first daily eats post of 2016. I’ve been hearing that you girls have missed them! So, enjoy!
MONDAY
Breakfast: Two gluten free waffles with honey greek yogurt, PB, and organic blueberries.
To start the workday: Chai tea from Starbucks with my friend/biz-time-co-worker Asia that I refilled about 5 more times throughout the day. (Just ask for double tea bags!)
Lunch: Leftovers from Sunday brunch with my parents and Marco. I ordered chicken fajitas with rice and beans after Church on Sunday, and the leftovers from this meal lasted me 3 full meals. Lunch, dinner, and lunch again. Love when that happens!
After lunch I ended the workday (I love to work half-days on Monday) and went to the movies with Marco. We were the ONLY people in the entire theater, which was awesome. While I was there with him I savored a handful of sour patch kids. Like a little kid at the movies!
Snack: Multigrain pita crackers (TJ’s) with brie cheese and olive tapenade. This has been our go-to Bachelor girls night snack this year, so I’ve had lots of leftovers :).
Dinner: A wedge salad that we recreated from a dinner we ate out over the weekend. Iceberg lettuce, bacon bits, blue cheese dressing, cherry tomatoes, and croutons. Yum, yum!
Petite-Treat: Rice milk with two raw cacao and oatmeal cookies (the cookies are not raw – only the cacao) that my momma made while she was visiting over the weekend. So yummy!
TUESDAY
I’ve been doing an early morning gym class lately called SWEAT. It’s basically CrossFit, and kicks my butt every single time, but I have so much fun doing it. The class is fairly small and close – everyone knows each other by name, and I love that!
Before the class (6:15) I had one of Marco’s Tigers Milk bars to get me going.
Breakfast: When I got home from the gym I had a gluten free waffle with peanut butter and a little bowl of honey greek yogurt with a sprinkle of granola and blueberries.
Lunch: Vegetarian chili (recipe) that I made Monday night (we didn’t eat it Monday night, I just cooked it for fun since I knew I had time) with mozzarella cheese & cilantro with blue corn tortilla chips on the side.
After breakfast I went to Starbucks with Asia (we start most mornings this way!) and got a chai tea that I, again, filled up several times throughout the rest of my work day. Ask for two bags, you won’t be sorry!
Dinner: Marco and I walked downtown and got Chipotle before we ended the night with our Church small group.
In my burrito bowl: brown rice, black beans, fajita veggies, chicken, mild salsa, corn salsa, a little cheese, and lettuce + we shared chips & guac on the side.
