Daily Eats
Good-morning beauties. And happy Monday. I’m here today to share the other half of last weeks eats with you, as promised. Last week was a busy, fun-filled week, so it was nice to get some rest in this weekend. Yesterday, Marco and I totally relaxed after Church. We even got a nap in!
As a reminder, the purpose for sharing my eats is to set an example that you CAN ditch diets, eat intuitively, and feel great in your body without calorie counting, diets, or deprivation. I teach this to all of my clients, and now they’re able to be examples too. You can see THEIR stories here.
WEDNESDAY
Breakfast: Honey greek yogurt, banana, blueberries, hemp granola, and peanut butter
Mid-morning: Two of moms homemade raw cacao & coconut cookies with tea
Late lunch: Vegetarian chili with croutons, mozzarella cheese, and cilantro plus a side salad with blue cheese, cherry tomatoes, and a little bit of bacon
For dinner, I went out with a group of friends to celebrate restaurant month. The Granada in SLO had an awesome three course menu that we were all excited to try.
By the way, I posted this photo on Instagram and people were surprised at how tall I am. I’m 5’9″ in case you’re wondering (plus, in this photo I’m also wearing 2″ booties). It’s funny how when you only see someone through photos, you never really know!
1st Course: Ceviche (possibly the best ceviche I’ve had – I can be super picky with ceviche)
2nd Course: Butternut squash soup (spicy & delicious!)
3rd Course: Lemon butter cod, “pureed potatoes” (aka, mashed potatoes), and sautéd spinach. Yum! This meal was deeeeelicous and I got to take half of my fish home to enjoy the next day.
THURSDAY
Morning tea: Two of moms cookies plus my recent favorite, matcha tea latte (1 tsp. matcha, 10 oz hot water, 1 Tbsp. coconut oil, and 1 tsp. honey blended up)
To continue my morning, I went on a hike with my friend Brittany. Ah, it was so beautiful out this day, and the sun & walking early in the morning gave me so much good energy.
Late breakfast: When I got home from my long hike/walk with my friend, I made a late breakfast of yogurt, fruit, and granola.
Lunch: Leftover dinner from the night before
Petite-treat: A square of dark chocolate & a tiny tangerine.
Late night snack: On Thursday night I went with friends to a conference called “Ten Talks.” The event was basically 10 entrepreneurs sharing their inspiring stories in ten minutes. Pretty inspiring!
The event ran way later than expected, and I was starving when I got home. Before bed I made a snack plate of crackers, brie, and olive tapenade. Mmm, totally hit the spot.
FRIDAY
Morning tea: Friday morning started out with cozy blankets, tea, and one of moms cookies.
It felt so fun to start most AM’s last week with tea & a cookie.
After my cozy time, I went over to my friend Asia’s house who was hosting a HUGE clothing swap charity event (all of the clothes that were left at the end of the night – which was A TON – were donate to a women’s shelter. I helped set up for a couple of hours and then ran home for a quick late breakfast.
Late breakfast: Two gluten free waffles and yogurt with granola & blueberries.
After breakfast I ran back to Asia’s and helped again until 2:00 PM. The clothing swap was SO fun. I’m thinking nearly 100 people showed up! It was definitely a success. We turned Asia’s house into a small crazy-clothes-filled boutique.
At 2:00 PM I met up with a friend to work from Starbucks for a couple of hours. Once we were done working, I went back home, made a super late lunch, and then took off back to the clothing swap to help.
Late lunch: A super toasty cheese & tomato sandwich with pickles on the side. EXACTLY what I was craving. Ah, this one hit the spot oh so good.
Dinner: Side salad + a small bowl of vegetarian chili

To end my Friday night, I went to my friend Jenni’s house to watch her little one for a couple of hours so she could enjoy a night out with her husband. It was a great, fulfilling week and I was totally pooped at the end of it. Saturday called for sleeping in, for sure.
