Daily Eats: Almost-Gone-Wrong Quesadillas (Oh My!)

I totally screwed up this recipe… & it may just be the best mistake I’ve ever made in the kitchen. Such deliciousness!

Today I am sharing daily eats from last Tuesday. I have so much to catch you up on! Ah! This whole week we’ll be doing that. Tuesday started off with a simple breakfast of two eggs & toast.

I was so busy with work on Tuesday that I hardly had time for lunch. But, I still made it! I managed to get in half of a delicious chicken sandwich with Milton’s multigrain bread, mayo, mustard, sliced deli chicken (from the deli counter), tomato, onion, and lettuce. This half was perfect & allowed me to not rush.

Now, dinner… oh, baby… that was another story! I was so excited to make these quesadilla’s for Marco & I! I got this recipe from Pinch of Yum’s blog. Lindsay, I love you for creating this.

Are you waiting for the part where I share the almost-gone-wrong part? Well, after I got everything made and into the CrockPot on Monday (when I did my prep)… I went to put leftover ingredients away and realized that I had bought split green peas instead of green lentils (!!!). The recipe clearly calls for lentils. Well, I made it anyway… and oh heavens! It was still so good!

You guys definitely need to make Lindsay’s recipe! (Make them my way, or hers, they’re going to be divine.)

These were heavenly, and I enjoyed the entire thing. My belly was so cozy & comfortably full after this meal. After we cleaned up the kitchen together, we cozied up to watch Netflix in the living room.
