Daily Eats and Meal Ideas from Trader Joe’s!

Hey gorgeous!

Through talking to many of you on Instagram in the past couple of weeks, here’s what I’ve found:

You want food to be easier, not harder. And, you want to FEEL healthy (mentally, emotionally, physically). 

You want your food to taste good — to enjoy it. You want new ideas that are simple and don’t require you to spend hours in the kitchen.

So…

I am putting together an experiment with just this. I’ll be using Trader Joe’s because they’re simple and low-budget. (This has no affiliation with TJ’s, I just love Trader’s.) 

I’ll be sharing meal ideas with you — all of my favorite, feel-good, satisfying meals to make from Trader’s. Yay!

If you don’t have Trader Joe’s, don’t worry! You will still benefit from the meal ideas, lessons on eating intuitively and listening to your body, and gentle, satisfying nutrition (simplified) — I will be incorporating all of these things in this exclusive event.

These are the things (everything “bolded” above) that I believe are important to feeling our best/most joyful!

Remember, as I share in my own story, being “thin” won’t make you happy long-term. Being healthy will.

I’m here to teach you how to embrace health without obsession. Health that brings you openness, joy, and variety.

I share my eats in hopes that you’d leave here today feeling inspired and full of PERMISSION to listen to YOUR BODY, as I listen to mine. I hope these posts fill you with the FAITH you need to let go of ALL food rules/control (just as I have!).

Sunday

Sunday morning started off with getting ready for the lake for the day. I cleaned up dishes from the night before, made myself a coffee, and started making lunch to bring with us.

This photo is serves as an “all-inclusive” of what we brought to eat since I didn’t take photos of each item as I ate it 🙂

Breakfast: Ezekiel toast with Organic creamy PB from TJ’s (yes, salted) and banana with a cup of coffee.

Lunch: PB&J on Ezekiel bread (yum, so nutty and delicious!)

Snacks: I took an apple (didn’t eat it) and a bag of mixed & lightly salted nuts to munch on. Marco took a bag of “Munchie’s” he’d gotten at Walmart the night before and we packed Blue Moon, La Croix, and Coors Light.

Daily Eats | Tuna melt on sourdough toast with a slice of provolone broiled over the top. On the side, I had a salad with baby spring mix, balsamic (I'll share how I make this in the TJ's challenge I'm doing in TGV - takes me 30 seconds!), mandarin oranges, and feta cheese. Yum! So good.

After the lake we came home unpacked, cleaned our cars and then made random things for dinner. I had a tuna melt (canned tuna and mayo for the tuna salad) on sourdough toast with a slice of provolone broiled over the top.

On the side I had a salad with baby spring mix, balsamic (I’ll share how I make this in the TJ’s challenge I’m doing in TGV – takes me 30 seconds!), mandarin oranges, and feta cheese. Yum! So good.

This was a super simple “going through the fridge” type of dinner. After this, we relaxed and watched the documentary “Happy” on Netflix. Man oh man was it SO good. It spoke to my heart in such a big way. I cried. For sure.

In fact, I was so inspired that today in TGV I created a whole study guide for all of the members so that they can do a movie night with their friends/family this week and follow along with the guide. It was so good!
