Daily Eats: Back in SLO & Eatin’ Good

Good-morning beauties. I’m at Starbucks in SLO this morning writing to you all, before I finish prepping for mine and Simi’s Finally Free Mastery call. Can you believe we’re already on week two? It feels like we just opened the doors yesterday, but it’s been two weeks since we closed em’.

Today, I’m going to share Wednesday & Thursdays eats with you. Wednesday was a half Ventura, half SLO day and Thursday was a full SLO day, as today will also be.

WEDNESDAY

Daily Eats | Healthy Hits the Spot - 1 of 12

Wednesday morning started off by working at Simone’s coffee shop. When I got home around 10:00 AM I snacked on a KIND bar, and then hit the gym with Marco.

When we got back to the house, I had a client session and then made a quick lunch before we drove back to SLO. Aunt Shelly’s soup (she’s been making a ton of delicious soup for my family!) with avocado toast.

When we arrived home in SLO, I got back to work and had a couple more client sessions. Before I jumped on the phone, I had a small snack of hummus/pesto (homemade by dad, yum!) with rice crackers.

After work I met a couple of my girl friends for a hike and dinner. We hiked around my friend Caitlin’s house and then drove downtown to find a place to eat. We landed at Sylvester’s Burgers in Atascadero where I ordered a turkey burger, a beer, and then shared garlic fries between the table. Such a fun night!

THURSDAY

Thursday morning started off with about 2/3 of this oatmeal (filled quickly) and the gym. After the gym I ran by Trader Joe’s to get groceries for a couple of days.

When I got home from Trader Joe’s, I went to Starbucks for a while (I’ve been loving just a simple black coffee when I go out) and worked from my laptop. I got home around 12:00 and had a quick Greek salad for lunch before a walking session with my 12:30 client.

I’ve been having so much fun with walking sessions. They’re simply where a client or myself says Hey! Let’s make our session a walking one today! and we’re each walking while we have our 50-minute session on the phone. Conversation flows, our legs are moving, and it just feels good. This is something totally new that I’ve been experimentng with and so far, it’s been great!

Around 3:00, I got hungry again so I had two small tamales with salsa verde on top. I’d just made the same for Marco.

For dinner, Marco and I went to Ember for our friend Morgan’s 27th birthday. It was so good. We ordered three small plates to share + nibbled on a square of bread before the meal.

I ended up eating the avo salad (above this picture) and he ended up eating the duck pate on toast. Worked out perfectly!

We then shared this small pasta dish and one slice of flatbread pizza below that a friend had ordered. Looks like quite a bit, but was just the perfect amount. I left feeling super light and happy from having so much fun with friends.

When we got home I went straight to bed and slept like a baby. As I mentioned in the beginning, I’m now up and sharing it all with you girls from Starbucks. I love sharing my mornings with you!
