Good-morning and happy Thursday!
I have another daily eats post for you today. It’s the last one for this week and next week, because I have some new content coming for you!
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine alongside you.

Breakfast – Two eggs over-medium and sourdough toast with Kerrygold butter. In my coffee: frothed oat milk. Yum!
Lunch – I was simply craving a bagel. We had cinnamon/raisin bagels in the freezer, so I took one out, toasted it, and topped it with cream cheese. Simple!
A few hours later, before I took Abby for a hike, I wanted something more to eat, without spoiling my dinner appetite. So I had this Daily Harvest butternut squash and chimichurri bowl. Super yumm!
Here’s what it looks like (this is a small bowl/spoon – it’s not very big, but is satisfying!).
After our hike I ran a few errands. I had to run to Target to do a return and pick up ingredients for dinner (did a full grocery shop the following morning). I was hungry while out, so I snacked on this PB NuGo Dark bar (so good!).
When I got home I unloaded the groceries and started making dinner. I sliced up some bread to much on with Marco while cooking (we were hungry!).
Dinner – Shrimp linguine with olive oil and lemon. Here’s the recipe. It was so fresh and good – tasted so clean and crisp! I added cherry tomatoes because we have lots to use! Oh, and a side of bread with olive oil and balsamic.
Breakfast – I had a LATE breakfast around 11:00 am of leftovers from the night before. I was out running errands, both personal and for work all morning. This was so tasty leftover!
Lunch – Around 2:30 I made this pesto tortellini (frozen) with arugula, tomato, and parmesan cheese. Pretty similar vibe to breakfast – it was so good! I’m in a pasta mood 🙂
At 6:00 Marco and I headed to the gym. I ate half of this complete cookie to give me good energy for my run, and a great run it was! These cookies are the best!
Dinner – Part of this weeks meal plan (here’s how I do meal planning while eating intuitively) we have two nights of Subway because I’ve got coupons and we love Subway. Ha! Since we weren’t going to be home from the gym until 7:00, Marco picked up dinner on the way home so I wouldn’t have to cook late.
What I order from Subway: wheat, turkey, American cheese, mustard, olive oil + vinegar, and “everything” for the veggies. Mmm-mmm good!
Breakfast – Two eggs over-medium and sourdough toast with Kerrygold butter. I ate this while I caught up with my dad on the phone.
Some sweet time with my girl in the morning and a mid-morning walk, before a TGV coaching call.
For a snack, while I was FaceTiming my friend Jess, I had half a complete cookie and black coffee (these hold me over so well – it’s such a calm, filling, satisfying snack).
Lunch – Mmm. This was so good! A gluten free everything bagel from Trader Joe’s, toasted… and topped with onion/chive cream cheese, turkey, sprouts, arugula, cucumber, tomato, sea-salt, and a drizzle of olive oil. Mmm!
As I finished up work around 5:00 pm I wanted a snack, so I grabbed this bowl of veggie crisps. I grabbed a few more after I was done with these, thinking I wanted them, and after a couple of bites decided I was done. So I threw ’em back in the bag (#intuitiveeating, friends!).
About an hour later, as Marco and I were driving to the gym, I had half a Complete Cookie. I can’t say it enough – these fuel me so well for a workout!
Dinner – Wild rice medley with sautéed chicken thighs cooked in olive oil and garlic with stir-fry vegetables and low-sodium soy-sauce. So good!
It’s been a great, productive workweek over here, friends. Today I’m feeling inspired to “revamp” my schedule/routine using all of the tools that I reach in the Routine Workshop in The Growth Vault. Excited!
