Wednesday

Wednesday morning started off with yummy butter, raw cacao & coconut oil Coffee

eggs and toast

To follow my Coffee I had eggs n’ toast

organic red apple

My mid-afternoon snack was an organic red apple

eggplant parmesan

And dinner was eggplant parmesan over peas, carrots, corn, and green beans with a side salad. The salad had kale, cabbage, brussel sprouts, red bell peppers, green olives, and goddess dressing.

Thursday

eggplant parmasen over tortillas

Thursday morning I felt like eggplant parm for breakfast, so I heated some leftovers up and put them over corn tortillas. This was delicious, but I lost a taste for it after the first one. I ate half of this plate.

And of course, the day started with my recent find, butter, raw cacao & coconut oil Coffee (search: bulletproof exec. in google)

Around 3:30, I had tofu over brown rice with a side salad & some extra red bell pepper.

After that meal I wanted something sweet, so I had a little slice of tuscan whole wheat bread with butter & creamed honey. Wow, so yummy, and reminded me of childhood sugar/cinnamon bread — and it didn’t even have cinn (although that would be good, too)!

Dinner was really late around 8:30 (ended work late), so I kept it simple. An open faced turkey sandwich with tomato & iceberg, with a side of tortilla chips and fresh salsa. I threw 2 ruffled potato chips in to taste ๐Ÿ™‚

Dessert was 2 prunes.
