Daily Eats: Chicken, Quinoa, & Black Bean Bowl Recipe

Today I am sharing what I ate last Thursday. Here’s to new food ideas & living a healthy life without counting calories!

Alrighty, let’s jump into Daily Eats from last Thursday!
Breakfast – two over-medium eggs & steamed brussels sprouts with olive oil & sea-salt. This craving hit me out of nowhere! So good though.
Mid-morning snack – multigrain pita crackers with a slices of cheddar cheese & turkey on top. Does this remind you of childhood? It does, me!
Lunch – leftover eggplant parmesan (Dad made it this weekend while in Ventura, and I packed some to-go). It’s amazing!
Throughout the workday I sipped this honey lavender Yogi tea. I love these teas at night & through the day!
Afternoon pick-me-up – smoothie with greek yogurt (plain), banana, blueberries, spinach, whole milk, and flaxseed. Mmm. I’ve been craving yogurt in smoothies lately. So creamy and filling.
Dinner – Chicken, Quinoa, & Black Bean bowl. Below, I’ll list what’s inside.
- 2 cups cooked quinoa
- 2 chicken breasts cut into cubes & cooked in olive oil with chopped, spinach, onion, and mushroom (chopped the veggies in a food processor and added them in with the chicken when it was almost fully cooked)
- 1 can of drained black beans
- 1 bag of steamed broccoli florets
- pico de gallo (fresh, store bought)
- Mix all together in a large bowl once cooked/prepped as listed
{Updated 4/23/15 – I accidentally said tofu bowl! This is chicken 🙂 But, you can do this with tofu, too!}
The Hubby enjoyed Haagen Daaz & Oreo’s for dessert. At times I join him. Knowing that I can join him whenever allows me to pick & choose when it really sounds good. I opted for more tea instead. Plus, I was feeling fulfilled watching rules of engagement & cozying up in my pajamas.
