Daily Eats During the Workweek


I’m here with more eats from the past two days to share.

Before we dive into daily eats today, I want to remind you that these posts are NOT for comparison (if these posts are triggering for you in anyway, scroll THESE posts instead).

I share my eats in hopes that you’d leave here today feeling inspired and full of PERMISSION to listen to YOUR BODY, as I listen to mine. I hope these posts fill you with the FAITH you need to let go of ALL food rules/control (just as I have!).


Tuesday morning started off with coffee, blogging, and half a slice of toast with one egg (I made a full piece with two eggs but was just not feeling it morning).

Following breakfast I jumped into client sessions. Between morning and lunch sessions I took Abby for a walk and came home to jump right back in.

My brain is telling me that I must have eaten lunch that day, but for the life of me I cannot remember what I would have eaten. I may have skipped?

My go-to snack mix for energy | Almonds, cashews, and dark chocolate.

Between my afternoon/evening sessions I snacked on this bag of nuts/chocolate and a honey greek yogurt. I only had ten minutes between each session this day so it truly was bites of this, bites of that. That’s what worked!

For dinner we were pretty dry in the fridge so I pulled out a couple of black bean enchiladas from Trader Joe’s (frozen) and fried up a couple of already baked (I had baked them Monday night) potatoes in olive oil.

We mixed the two and topped it with guac (which we also had with chips), sour cream, and green onions. Yum! Turned out super good and so easy!

After dinner we rented Instant Family – I love this movie so much. I had already seen it in theater but Marco hadn’t seen it. I love a good movie after work on a weeknight.

Wednesday morning started off with a long walk and coffee with Abby and my cousin who just moved to Reno (wahoo!). After our walk I ran to TJ’s to restock on groceries and came home to make breakfast.

My first client on Wednesday was at noon so I had a little more time to get some things done in the morning. For breakfast I had two eggs, the rest of the potatoes, and chicken breakfast sausage (TJ’s – my favorite!).

After breakfast Abby and I went for another little stroll (the sun has been out so I’ve been wanting to get out of the house as much as possible!) and then I hopped into coaching sessions for the rest of the afternoon.

Before my last session I needed another snack to give me energy so I grabbed this little bag of nuts/chocolate.

Small, simple post-work snack: a few slices of cheese like above with some everything pretzels and hummus.

When I got off work I wasn’t super hungry so we waited until about 8:00 PM to eat. However, I did snack on a few pieces of cheese like above with some everything pretzels and hummus. Small, simple snack!

Easy, delicious dinner Trader Joe's dinner. Spinach and chive linguine with shrimp. Seasoned with sea-salt and that's it.

For dinner I made spinach and chive linguine with shrimp. This was so easy. I cooked the shrimp with olive oil, garlic and butter and mixed it with this cooked linguine noodle. Easy! Delicious. Seasoned with sea-salt and that’s it.

Today, Thursday, is my last day of client coaching for the week. Tomorrow will be office work for the first half of the day and then I’m off for the weekend. Getting my hair done and spending time with friends.
