Daily Eats: Eating What We Have on Hand (Leftovers Edition!)


More daily eats for you here today 🙂

Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.

Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine alongside you.

Scrambled eggs and bacon for breakfast

Breakfast – Tuesday morning started off with quiet time and leftovers for breakfast (scrambled eggs and bacon) with a side of coffee and almond creamer.


Lunch – For lunch I had more leftovers from the weekend. They gave away loads of ravioli, garlic bread, and lasagna. It was awesome! Why doesn’t every wedding send you home with the leftovers? I ate about 2/3 of this.

Mashed potatoes mahi mahi

Mid-day I went for a long run with Abby and needed something when I got home before my evening session. I showered, changed clothes and then ate these leftovers: mashed potatoes and mahi mahi topped with sriracha and a little bit of tartar sauce. Yum. This was so good and perfect to hold me over!

Lasagna with salad and garlic bread

Dinner – When Marco got home from work I heated up the rest of the leftover Italian food from the weekend and made a side salad with extra avocado to go with it. Yum! So tasty. This week is all about leftovers!

Dark chocolate peanut butter cup

Dessert – To satisfy my sweet craving, I ate a frozen dark chocolate peanut butter cup (yum!).

And to fully wrap up the night I cozied up on the couch with M, watched TV, and sipped “Well Rested” tea from TJ’s.


Eggs and leftover mashed potatoes breakfast

Breakfast – Wednesday was what sounded good but also an attempt to finish up leftovers. I warmed up the last of the mashed potatoes in a little bit of olive oil (so they got slightly crisp on the bottom), topped them with sriracha and scrambled some eggs on the side. Yum!

Tuna melt with an arugula side salad

Lunch – A tuna melt with arugula, cherry tomatoes and balsamic glaze on top. So good! The tuna mix had tuna, mustard, a tiny bit of olive oil, and relish. I topped that on a toasted piece of sourdough, added provolone cheese, and broiled it. Mmm-mmm!

BLAT for dinner

Dinner – a BLAT with extra tomato and avocado on the side. Yummm! This was so good and again… was an attempt to eat what we had on hand 🙂 My aunt and uncle brought up loads of delicious tomatoes, so I’ve been using those!

Dark chocolate peanut butter cup

Dessert – After I cleaned up and prepped for the next day I had a dark chocolate PB cup, followed by a warm mug of “Well Rested” tea and TV with Nichole and Marco (my friend Nichole and her pup stayed the night with us).

It’s been a great week relaxing, being home, working, going on long run/walks with Abby (wuns), and welcoming new clients to coaching.
