Daily Eats + Five Year Anniversary!

Yesterday was our FIVE year wedding anniversary and we had such a blast. I can’t wait to share it with you as I share this weeks eats!

I share my eats in hopes that you’d leave here today feeling inspired and full of PERMISSION to listen to YOUR BODY, as I listen to mine. I hope these posts fill you with the FAITH you need to let go of ALL food rules/control (just as I have!).

Monday

Daily Eats | Monday was TJ's bran flakes (yum, favorite cereal, or "toasted oatmeal flakes"!) with raisins, banana, almond butter (it's so good!), and ground flaxseed. Yeaaaah, fiber!

Daily Eats | Lunch was a salad with leftovers on top to add some substance: spring mix, feta cheese, tomato, avocado, and balsamic vinaigrette (balsamic, olive oil, honey, dijon mustard). On top was leftover harvest grains and chicken.

Daily Eats | For dinner we had rice orzo pilaf (soooo gooooood), sautéed spinach in olive oil with garlic (what you see here is an ENTIRE bag of spinach split between two plates - haha!), and chicken. This. was. so. easy. and good! Definitely going to remake this soon!

Tuesday

Daily Eats | Tuesday morning started off with a walk with Abby. Before we went I snacked on this banana to hold me over until I had time to make breakfast.

Daily Eats | Breakfast was two eggs, over-medium, two slices of toast (I love adding in a little end piece when it's there!) with Kerrygold butter, and coffee with almond milk. Mmm! So good.

Daily Eats | Lunch was crazy simple. I just had leftover rice pilaf and chicken in between clients. Nothing fancy! It carried me through.

Daily Eats | After work snack while we made dinner to tide me over - Daily Harvest mint and cacao smoothie to tide.

And then in the evening when I was off work I made this Daily Harvest mint and cacao smoothie to tide me over until we could make dinner. Had a couple errands to run first.

Wednesday

DAily Eats | A quick, simple breakfast of one slice of Ezekiel toast with an egg over-medium.

On Wednesday breakfast was a quick slice of Ezekiel toast with one egg over-medium.

Work from home essential - A coffee date to meet a friend to work. It's so nice to get out of my home office. I need it at least once per week. There, I got a cappuccino from Hub Coffee.

After breakfast, I headed to Hub Coffee to meet a friend to work. It’s so nice to get out of my home office and work from a coffee shop. I need it at least once per week. Such a nice change-up! There, I got a cappuccino.

How I calm and honor my hunger when I'm on the go - Like keeping a GoMacro Protein Please bar in my car.

On my way home I was hungry and snacked on this GoMacro bar that I had in my car (I always like to have a snack around to honor my hunger if it randomly hits – this is how I keep my hunger “calm.”)

Daily Eats | Daily Harvest minestrone soup with a fresh grilled cheese (sourdough, Kerrygold butter, and havarti cheese). So simple and yummy!

When I got home a little while later I had leftovers for lunch. I made a fresh grilled cheese and re-heated the last of the soup from last night. Simple!

Midday I recorded a Podcast with a friend/client and I cannot WAIT to share it with you! We talked about calm as your superpower, budgeting and eating, and “authentic eating” and what that means to me. Sooo good!

After the Podcast I went to a friends house to talk and visit with her and her baby boy. While I was there I slowly munched on a handful of these chocolate covered almonds. I like the dark ones 🙂

Daily Eats | Chipotle's chips and guacamole for a pre-dinner snack. Marco and I were craving it!

After that, I stopped by Chipotle to pick up dinner. Marco and I were craving it, plus, he thought they were giving out free guacamole. Turns out, that was only if you ordered with their app. Oh well!

In my Chipotle burrito: brown rice, black beans, fajita veggies, chicken, pico de gallo, cheese, sour cream, and lettuce. Yummm. I want this again. Now!

I snacked on a few chips with guac and then when we were ready for dinner I enjoyed my burrito and a Blue Moon. Holy yummm! This meal hit the spot SO well.

Thursday

Yesterday was our five year anniversary and Marco, knowing 100% the way to my heart, woke me up with coffee and a card in bed. Heavens. I need nothing more!

For breakfast I had a small bowl of cereal (same as at the very top of this post) with a slice of Ezekiel topped with PB and banana. Yum!

Daily Eats | A GoMarco bar and coffee to tide me over until lunch during a busy work day.

I worked through the morning, ran a few errands, and then came home for a meeting. Before that meeting I was starved but didn’t have time for lunch. So I had a GoMacro bar with coffee to tide me over. It worked!

In my Trader Joe's salad: southwestern salad kit, cherry tomatoes, and chicken. Took me about 3 minutes to make. Perfect!

The bar held me over for a couple hours to keep working. Once I had a chance to eat lunch around 3:30 I made a salad using a salad kit and “just chicken” from TJ’s. Both are easy to just throw together – chicken is cooked!

In my salad: southwestern salad kit, cherry tomatoes, and “just chicken” sliced/cooked chicken from TJ’s. Took me about 3 minutes to make. Perfect!

For dinner I ordered small plates (which were not small, haha!). First, this flatbread with tzatziki and hummus). As I write this, I realize I have some leftover in the fridge. Guess what I’m doing after this post! So good!

Next, I had beef lettuce wraps that also had tzatziki. Give me tzatziki on everything and I’ll be happy. These were so light and delicious. I was so satisfied.

All in all, it was a GREAT week with this guy celebrating our 5th wedding anniversary.

All in all, it was a GREAT week with this guy. This weekend we’re off to go tent camping. My only goals are to: relax, swim, catch a lot of sun, play, and get very dirty. Dirty camper = happy camper.
