Good-morning all! I’ve got more Daily Eats for you today, plus and incredibly yummy dessert recipe that your body will love you for!
Breakfast – 1/2 a piece of toast with one egg (wasn’t feeling too hungry that morning).
Mid-morning amazingness. Coconut Matcha Tea Latte! Did you see the recipe in yesterday’s post?
Lunch – leftovers from a couple of nights before. Brown rice pasta with bell peppers, sausage, and pesto.
Afternoon snack – a few pita chips with roasted red bell pepper hummus.
Dinner – more leftover quesadilla! Chicken, pinto beans, cowboy caviar, and mozzarella cheese!
Petite-treat – and THIS is what you’re waiting for, right? This is SO simple. Have a food processor? Great! Throw in: half a banana, two strawberries, a handful of blueberries (preferably all organic), 1/2 a cup of european plain yogurt, 3 tsp. of peanut butter (better when it’s 3 small tsp.’s rather than 1 Tbsp.), and chop! Pulse a few times until the yogurt is mixed and fruit is chopped. Top with a layer of your favorite granola and stir together.
My Hubby always requests half of this because he likes it so much! Such a feel-good petite treat :).
