Daily Eats + Girl Time

Hey all! Good-morning, and happy Monday 🙂 I’m here today to share daily eats with you from Friday! First off, I just want to say THANK YOU for all of your responses about online workshops in my last post! I’m digging through those responses today, and will keep you updated (make sure you’re on my email list for updates)!

I had a greattt weekend with friends. My friend Jen came to visit Friday, Saturday, and Sunday morning, and Sunday afternoon, I went wine tasting with a group of my SLO friends. It was all a blast, and I can’t wait to share it!

Before we dive in, let’s set the stage together: the purpose of sharing my eats with you is not so that you can compare your eats to mine, but rather, my hope is that you would find encouragement in these posts to listen to your own body and to eat intuitively without rules. To give you freedom!

Friday

Jesus and Coffee

The morning started off with coffee and office work. In my coffee: a splash of whole milk and agave. After coffee, I had a chiropractor appointment. I just started visiting a chiropractor for the first time, so we’ll see how it goes! Anyone have any good/bad experiences to share? I’m not sure what to expect!

When I got home, I was in a rush to get to work. My assistant was meeting me and I didn’t have time to sit for a full meal. So I grabbed half a GoMacro bar (I had the other half Thursday morning for a quick snack, too) and sipped the rest of my coffee. This wasn’t totally ideal as I was hungrier, but it worked.

Like I tell my clients, it’s best to be prepared, but sometimes all you can do is the best you can with what you have. My assistant has been a lifesaver. She’s worked with me since last summer and helps me get 4 hours of work done in 1.5 or 2. She’s such a fast worker! So helpful… Best investment ever!

After work, I went to Whole Foods to meet with a now new friend who is interested in becoming a health coach. We talked over lunch and I got to share my experience at IIN. I love talking about it and getting to learn about other peoples stories in return. So many passionate women out there!

On my salad: spinach, arugula, broccoli, kidney beans, garbanzo beans, roasted red bell pepper, cucumber, and kalamata olives. So yum! For the dressing, I drizzled balsamic vinegar, olive oil, and a splash of tamari. On the side, hummus, tabouli, and pita bread. This is my go-to at Whole Foods, for sure!

After lunch, I shopped around WF and went to Trader Joe’s. I even did a quick stop at Home Goods. Walking through the store was nostalgic because the last time I was there I was pushing my sweet mama around in her wheelchair. I thought of her as I walked around and knew she was right there with me.

When I got home from running errands I put the food away, did some laundry, got out of my work clothes and into comfy clothes, turned on music, and had some solo time before Marco got off work. When he got off, we hung out together as I prepped dinner and got ready for my friend Jen to come.

When Jen arrived, we all ate dinner together. Vegetarian chili with rosemary sourdough bread. Ah, this was so heavenly. The vegetarian chili (recipe here) made the house smell like garlic. Heaven. And the rosemary sourdough bread – do I even need to explain how good that was?

I bought the bread at Whole Foods. The brand is Brian’s Bread. I hope you have it at your local WF! I baked it in large chunks, and halfway through baking (just a few minutes to warm it up) I drizzled olive oil over each slice… sooooooo good this way to dip into chili or soup! Can’t wait for more 🙂

After dinner, Marco went to bed (early work hours the next day) and Jen and I stayed up to visit. We talk about mama, coaching, life, relationships, Jen’s upcoming wedding, all of it. Jen and I can talk for HOURS. That’s what I love about her!

Our weekend was so great… I’ll be sharing it with you over the next few days in more daily eats posts 🙂
