Wednesday

Yogurt and Granola

Breakfast was yogurt, about 1/16 c. of granola (just for crunch), a swirl or two of agave, half a banana, and a spoonful of almond butter

Brown Rice, Broccoli, and Chicken Curry

Lunch was brown rice, broccoli, and chicken curry

Slice of Ezekiel with avocado, sea-salt, and chili pepper flakes

Around 3:00, I had a slice of Ezekiel with avocado, sea-salt (great digestive aid), and chili pepper flakes

Decaf Coffee

Dinner was late, like 7:30/8:00. I was really hungry by then, so I had a cup of decaf to hold me over while I was cooking. Otherwise, I would have been picking at all the food. Wait… I did that a tad bit too… 😉

Bacon, egg, salsa, and homemade potato burritos

Dinner was exactly (exactly!!!!) what I was craving. Breakfast burritos! I think it’s because I didn’t have eggs earlier! Haha…

I made Marco and I bacon, egg, salsa, and homemade potato burritos. Mine skipped the cheese.

Thursday

Delicious Veggie Packed Omelette-broccoli, squash, collard greens, tomato, avocado, on top was cilantro and fresh, homemade salsa.

Breakfast was a delicious veggie packed omelette that my Dad made. He skipped the cheese & sour cream for me.

It had broccoli, squash, collard greens, tomato, avocado… you name it! On top was cilantro and fresh, homemade salsa.

CHEF TERRY AT IT AGAIN.

PB & Banana Smoothie

At 12:30 I had this yummy (yummy!!!) PB & Banana Smoothie. This was so thick, just like Ice Cream. Holy heavens.

-1/2 cup almond milk

-handful of ice

-1 large banana

-2 tbsp. Organic PB

-3 tbsp. ground flaxseed (important)

The flaxseed is what made it so thick and nutty. It really bulked it up. SOO good.

Lentil soup, cilantro, and a side of Ezekiel with Avocado slices and red bell pepper flakes

At 3:30, I had a real lunch of lentil soup, cilantro, and a side of Ezekiel with Avocado slices and red bell pepper flakes

Homemade Taco Salad

Dinner was taco salad that my parents made. That’s a big one, isn’t it? I didn’t get a chance to eat until 8:30, so I was hunnnngry. I also had a few chips on the side (maybe 5).

Note: instead of heavy dressing, sour cream, and cheese, I use fresh, homemade salsa only & get the creaminess from Avocados.

Yum, my eats had my mouth watering this week. I truly listened to my body, and that left me feeling so satisfied & good!
