Goooood-morning beautiful ladies! How’s the morning going so far? I’m up with coffee, just had some quiet time, and now get to blog to all of you. Wahoo!

Today I am sharing Monday & Tuesday’s eats with you. On Monday, I shared eats from the weekend, which you can read after this post if you’d like! Lot’s of daily eats to share lately!

Before we dive in, I want to set the stage and remind us all that these posts are not for comparison, to tell you what to eat, or when to eat it. Rather, these posts are here to inspire you, give you meal ideas, and encourage you to give yourself permission to listen to your own body.

Your body is brilliant, and I want to encourage you to trust her needs today!

MONDAY

Paige Schmidt | Egg, Toast, and Coffee

For breakfast on Monday I had two slices of brown rice toast with two over-medium eggs on top + coffee. This breakfast has really been hitting the spot lately!

Paige Schmidt | Dark Chocolate

Mid-monring I had a square of dark chocolate with peanut/toffee filling inside to satisfy a craving for chocolate. This did the trick!

Paige Schmidt | Pizza

For lunch I made a cauliflower crust pizza (the cheese one from Trader Joe’s) and added lots of veggies on top: arugula, asparagus, artichokes, and even a leftover veggie patty chopped up. I ate most of this pizza for lunch, and saved 1/4 of it for a snack, which I ate a few hours later.

Paige Schmidt | Chicken Tostada

Dinner was a chicken tostada with chicken I’d made in the CrockPot earlier in the day. I cooked 3 frozen chicken breasts with about 1/2 a cup of organic vegetable broth and a jar of Piquillo & Quinoa Spread from Trader Joe’s. Yum! Soooo good.

On the tostada I added refried beans, chicken, jalapeños, and romaine. My tostada shell was actually stale (whoops!) so I ate what was on top and left the bland shell behind.

Paige Schmidt | Smoothie

Late Monday night I was watching a show and got a craving for chocolate again. I thought about what I wanted and decided that a smoothie with raw cocao, peanut butter, and banana would more than do the trick and allow me to feel good – it’s exactly what I was craving and it satisfied soooo good!

TUESDAY

Paige Schmidt | Egg and Toast

Tuesday morning started out with quiet time and work. A breakfast of brow rice toast and two fried eggs did the trick!

Paige Schmidt | Smoothie

I was feeling a lot less hungry yesterday so for lunch I made a smoothie to sip through my client sessions. This smoothie had: spinach, banana, peanut butter, raw cacao, chia seeds, and milk. Mmm! So good.

Paige Schmidt | Tacos

For dinner I made tacos out of the leftover chicken from the night before: corn tortilla’s, chicken, romaine, mozzarella cheese (it’s what I had), and a little hot sauce.

Yesterday I woke up feeling loads better than I felt Monday. I had more energy, felt more creative, and less hungry than Monday. I thought to myself… I bet I’m going to start my period today, even though it’s not supposed to come until Thursday.

Not to my surprise, it showed up yesterday! Which explains alllll of my weekend feels. Getting a little sad on Saturday missing my mama (understandably!), feeling down Monday night, and my bodies cravings for chocolate.

I wrote this down because I thought it was funny: “Monday I felt like my world was ending. Tuesday I felt like a whole new world was beginning. What changed? I started my period.” Haha! Any of you relate?

Here’s a friendly reminder that if you’re feeling down or you’re having PMS, pay attention to what you need and remember “this will pass – it always does.” And you can read this post I wrote on PMS a while back!
