Daily Eats: Quarantine Style – Stay Home Diaries #10

I’m here today with more daily eats and stay home diaries. We’re on day 42 of “Shelter at Home.” Wild!
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

Monday
Monday morning started off with early work from 6:00 – 11:30 (I added new content to The Growth Vault as we just started Authentically You!).
At 11:30 I took a break for breakfast (more like lunch!) and made the best breakfast sandwich. I’ve been LOVING these and they hold me over a while!
Breakfast BLAT: two slice of sourdough, two eggs over medium, two slices of bacon, a “tiny” avocado, and arugula. The arugula MAKES it! So good!
Around 4:30 I had an apple with peanut and almond butter. I’ve been loving a little bit of both!
HAHA. It was hot on Monday so I put this cool rag around Abby’s neck (covering her ears here and it made me laugh!). She sorta liked it and was sorta confused. Ha!
Shortly after, for dinner, we had the last of our one-pot beef stroganoff. Yum! Easy – I love leftovers.
Tuesday
Tuesday morning I woke up, had coffee in bed, and then Marco and I spent an hour on the vineyard helping out before work. I had coffee from my new mug. Love!
I was hungrier much earlier this day so Marco and I both had breakfast BLAT’s at 8:30. Yummmm. I had mine opened faced (but with the same amount of food).
For lunch I had salmon, sweet potato (not sure what kind this is but it’s white…) and seaweed salad. Mmm! So easy too. I roasted the sweet potato while the salmon baked.
This is what the salmon looks like, from Costco. Pesto butter. Yum!
And this is the seaweed salad, also from Costco. So good!
At 4:00 I needed a quick and easy snack before my final client of the day so I had half a slice of sourdough with pesto and salami. It’s what we had and was tasty!
After my session, I had another of the same thing folded. I ate this before Marco, Abby and I went for a run. Yumm! Might make a sandwich like this today!
For dinner we had more salmon with spinach and cheese raviolis. Sooo good! All of our food was so tasty the past couple of days! Mostly from Costco.
