Daily Eats: Quarantine Style – Stay Home Diaries #11

Morning, friends!
Last week was full! And last Friday was full! I didn’t get a chance to do a blog post for you on Friday.
So here we are, with eats Wednesday through Sunday. And since it’s a bit hard to remember everything I did each day since last Wednesday 🙂 this post will mainly be about the eats themselves.
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

Wednesday
Breakfast – two slices of sourdough, two eggs, two slices of bacon, and arugula.
Lunch – leftover spinach and cheese ravioli’s, salmon, and roasted yams.
Dinner – a microwave teriyaki chicken and veggie bowl with added avocado while FaceTiming with my friend Kayla. 💛
She had dessert with me too. We were both eating apples and nut butter while chatting. Ah, so good for the soul.
Thursday
Breakfast – two eggs over-medium, sourdough toast (had to toast, flip, and toast some more, so the middle burnt – I don’t mind) with coffee.
Lunch – a sandwich with what we had on hand. Sourdough, pesto, salami, arugula. Random, but actually quite good!
Dinner – was a combination of things. I had a few chips and guac while cooking.
I made a couple of different things. This: butternut squash cooked with ground beef and onion. Sooooo good. I nibbled on some of this from the pan.
And ultimately a bowl of pesto noodles with brussel sprouts, bacon, and parmesan cheese.
Friday
Breakfast was un-pictured as I ate quickly between 5 morning phone calls and sessions. It was a bowl of ground beef and butternut squash. Soo good.
Lunch – leftover pesto noodles with brussel sprouts and parmesan cheese.
Afternoon meal – I got hungry again a few hours later and had the last of the leftover butternut squash and ground beef (so making this again because it was great!) with avocado on top.
For dinner, I didn’t really have a solid meal. Wasn’t feeling cooking. Instead, I had half this amount of chips and guacamole shown (put the other half back).
And the rest of these brussel sprouts. Simple, easy, delicious!
Saturday
Breakfast – two eggs and Siete tortillas with green salsa. Yum!
Lunch – exactly the same sandwich as earlier in the week. Forgot to photograph it, so borrowing this picture again 🙂
Afternoon small meal – peanut butter toast with banana before a run with Abby.
Dinner – pesto noodles with parmesan and sautéed chicken with red wine (from the grapes of the winery where we’re living!).
Sunday
Sunday we road tripped around CA trying to find a new truck. We had zero luck, but had a great day together.
For breakfast I ordered the new breakfast burrito from Starbucks and my friends… I will not order that again. It was no good. Ha! I ate some to coat my stomach and gave the rest to Marco.
We both didn’t think it was anything special. Sorry for the photo of the bag and not the food, whoops!
For lunch we got In-N-Out, ate in the car at a park, looked at trucks online, and took Abby for a walk. Sooooo good. I had a few of the fries, gave the rest to M, ate all of my burger and enjoyed all of my vanilla shake. Soo good.
We got home around 8:00 and had leftovers for dinner. Pasta with pesto and chicken. I’m about ready to be done with pasta for dinner, ha! That said, it’s doing the trick for now while we’re doing less grocery shopping.
Last time Marco went to the store I asked for dark chocolate and he accidentally bought this kind with sugar alcohol. I had one square last night and didn’t eat more because I KNOW this will not go over well with my stomach.
I made Marco chicken wings and had two myself.
Ultimately, the past 5 days or so have been good. I did Bible Study on Friday with friends, I’ve been working in the vineyard in the mornings to help, I’ve been getting lots of sun, running, and trying to keep a feel-good perspective.
This time of quarantine is really weird for us. We feel we’re in such a waiting season for many things. I think I’m learning how to accept and get comfortable with that… trusting that they’ll someday come.
I know all will happen when it’s meant to. I really do know and trust that. And even so, learning to navigate a waiting season like this is a learning curve for me (for us).

I plan to go to Trader Joe’s this week. Last month we spent more money on groceries than in the history of EVER for us. Seriously! Haha. I told Marco “this month it’s back to Trader Joe’s!”
I cannot wait to go to Trader Joe’s later this week. We’re going to finish what we have here first.
