Daily Eats: Quarantine Style – Stay Home Diaries #13

Goooood-morning and happy Friday! Let’s dive into this weeks eats!
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

Wednesday
Wednesday morning started off with Podcasting at 7:00 am, a run, and then breakfast at 10:30 with Marco. Eggs, toast, bacon, and coffee. Mmm! This has been our jam this week.
Breakfast held me over pretty well and so for lunch, around 3:00, I had the other half of my carne asada burrito from the night before.
We ate dinner around 7:00 which was a big chicken taco on a Siete tortilla. We had a few tortilla chips with this as well. We made a microwave rice/beans bowl and mixed it with the chicken I BBQ’d. We added leftover bacon from breakfast, cilantro, and cilantro dressing from TJ’s. Super yumm!
Thursday
The next day for breakfast we had the same thing – two eggs, toast, and bacon. So good. Just had this again today (Friday).
For lunch I had leftovers from the night before in a bowl, mixed with arugula. Sort of made a salad out of it! Arugula, rice, bean/corn mix, chicken, and avocado with cilantro dressing.
Around 5:30 I had a snack of pretzels with pesto while I wrapped up client emails. This snack held me over until we could make dinner at 7:00. We spent some time driving around looking at houses right when I was off work.
For dinner I made a simple pasta with olive oil, garlic, and ground beef. I added a bed of arugula to the bottom of mine and had lemon water with it. Yum! So simple and tasty.
We’re getting to the end of our groceries but are still creatively finding things to eat that taste great. It surprises me each night, ha!
And that’s it my friends! Now it’s Friday, I just got done with Bible Study with my girlfriends (we do it on Zoom) and I’m off to finish up my work for the day! I hope you have a great weekend and I’ll see you back here Monday!
