Today, I’m here with more daily eats and daily life during the Stay Home Demand.
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

As I shared in my post yesterday, the morning started off with coffee outside to wake up and then blogging. When I finished yesterdays post, I grabbed Abber’s and we went for a run. When we got back, I showered and got dressed and jumped into work.
I didn’t get hungry for breakfast before my 10:30 am client, so an early lunch it was around 11:45. I had leftover brown rice pasta from the night before on a bed of arugula (my favorite way to eat pasta lately!), topped with parmesan.
After lunch, I had a few calls to make and then I had an open afternoon. I’d been so productive with work this week, that I decided to take a couple of hours to just break in the middle of the day.
One of my sweet clients text me yesterday morning asking if I needed anything from Whole Foods or Costco, since she was going. Hallelujah! I needed Wholly Guacamole from Costco (I hadn’t been wanting to go to Costco just for this, but had been craving it!), plus Nut Pods creamer and Siete tortillas from Whole Foods. So, first I stopped by her porch to pick those up. Sooo sweet.
Next, I went to Scout coffee where they have an order and pick-up station. Everyone was great keeping distance who was waiting for coffee. I sat in my car with Abber’s until they called my name. Oat milk cappuccino!
I took my cappucino and pup and we drove to Los Osos (small beach town here) to drive by a house that just went on market. I didn’t love it as much as I thought I would from the photos, but it was a fun outing!
When I got home I had a snack of Siete chips with guacamole. So glad to have these little guacs back! After I finished up this snack, I did a quick house clean up and got back to work. I had another client session at 4:15.
After my session, at about 5:30 I was hungry but not done with work. So, I made this little snack plate and brought it to my desk. I worked until about 7:00. This held me over just right!
For dinner, I had another container of leftover pasta with red sauce, but I was craving pesto. So I made a new batch of brown rice penne pasta with pesto. Yum! I added arugula and artichoke hearts to it. So good! Wasn’t feeling meat.
Today will be another good day, I have:
- 8:00 Bible study on Zoom
- 9:00 meeting with assistant
- 10:30 session with client
- 12:30 call with someone who wants to become a coach
- 2:00 off work + Marco and I are going to drive by a couple more houses that we have our eyes on (yay!)
Annnnd then I’m going to relax the rest of the evening, because although tomorrow is Saturday I am working a half-day. All fun things! We have a TGV Zoom hangout at 9:00 am and then I’m doing a Podcast at 10:30.
The rest of the weekend will be for rest, as I want to recharge for more coaching next week.
