I hope you had a good weekend. I’m here with more daily eats, Friday through Sunday.
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

Friday morning started off with blogging, coffee, and Bible Study. Gah. I just started a study of Philippians with two girl friends and gosh. This is my new favorite way to stay out my Friday. It was so soul-filling-good!
After Bible Study I had a meeting with my assistant, then took a quick break to eat leftovers for breakfast, before my client session. These leftovers were: brown rice noodles, ground beef, red sauce, on a bed of arugula. Yum!
A few hours later I ate lunch before Marco and I went for a drive to look at more houses. We’ve been watching Realtor.com like hawks and are driving by each house we like. Process of elimination!
Lunch: brown rice penne noodles, pesto, arugula, and marinated artichoke hearts. Yum!
For dinner, I made my most favorite recipe in the whole wide world: Ginger Chicken Jook! Find the recipe here. I had 1.5 bowls of this. Holy heavens. If you’re a fan of chicken flavored Top Ramen, you will like this. Ha! And it’s so nourishing!
Saturday morning I woke up, sipped coffee, ate a Builder Bar, and got into my cozy leisure-wear for our TGV Coffee Connection call. In The Growth Vault, we do these calls 1-2x per month and they’re GREAT.
Dress code: cozy Saturday attire. It is 100% appropriate to roll out of bed, throw your hair in a messy bun, grab your coffee, and show up to group. This is how we do it! It was such a great call.

For lunch, I had leftover Ginger Chicken Jook. Yummm! Just as good the next day. So great!
We hung around the house on Saturday. I cleaned, sat in the sun with Abby, ate snacks. I felt extra hungry on Saturday (that time of the month). I had two snack plates of Siete chips and guacamole just like this.
A little while later I made this snack plate: salami, white cheddar goat cheese, roasted/salted almonds. And I made some extra cups of coffee with Nut Pods creamer. Yum!
After that second snack plate, my hunger went away for a while. I didn’t end up eating dinner until almost 9:00 pm. So I made some super simple garlic risotto (boxed) and baked salmon (threw it in the over with olive oil and sea-salt and called it a day!).
Ah, Sunday was such a good day. First, I woke up and updated our budget (which was insanely easy since we’ve basically been going nowhere).
After a couple of cups of coffee, I went for a run with Abby. I wanted to eat something before we went, so I had this little plate of Siete chips and guac. Did the trick! Abby and I had a great, longer run where we got to soak up the sun and take our time.
When we got home, I gave her a bath, played outside with her (threw her tennis ball, this girl could play forever) and then showered and got dressed for the day.
After that, I plugged in my headphones and listened to Church at home (listen here if you’d like). It was great.
While I listened, I cooked lunch: Siete tortillas with cheese and ground beef (craving!). I cooked the ground beef with green chilies and me oh my… this was so good! I can’t wait for more today!
Normally, one of these would hit the spot. But I was really desiring more of that “full” feeling. So I had two and felt great!
A little while later we went to a friends house to have socially distanced drinks on the lawn. My friend Cait made me the yummiest iced coffee! Soo good!
While there I had this meatball (yum!).
And this bacon wrapped date! Soo good.
For dinner, once we got home, we had carne asada burritos from La Parrilla. Sooo good. I had about 3/4 of mine and saved the last 1/4 for today (just ate that for breakfast and am so glad I saved it – it was delicious!).
