This weekend did wonders for my soul.
In Fridays post I shared that this time was starting to feel hard. And that I was hoping to come back refreshed and recharged – that this was my prayer. Well, prayer answered!
I am here today feeling so refreshed and excited for the week to come. To start, let’s share some daily eats!
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

Friday morning started off with Bible Study through Philippians with my girlfriends Brittany and Asia at 8:00, then work.
Later in the morning around 10:45 I ate this breakfast. Two eggs, bacon, arugula, sour cream, and salsa on a Siete tortilla. Yum! I had two additional pieces of bacon which need no explaining (because yum!).
Around 1:45, a few hours later, I was a bit hungry for something else and had apples and almond butter (I pulled out the peanut butter too and switched between them).
That seemed to hold me over through the afternoon. I think because I was so hungry on Thursday, I felt less hungry on Friday (our bodies always balance out and we can trust them!).
Around 5:30 I had this bowl of penne pasta with pesto, parmesan cheese, arugula (in the bottom of the bowl) and artichoke hearts. Yum!
What I was most hungry for on Friday was rest, not food. I took the evening to really rest.
Saturday morning I woke up feeling so much better. Quarantine mood swings, friends! I poured my coffee, played on Pinterest for a while, and then hopped in the car with Abby for a drive/walk.
We drove through Atascadero, looked at some houses, then drove to Los Osos and looked at a few more. While we were in Los Osos I parked and we walked for a couple miles. It was sunny and felt great.
When we finished our walk we headed home (mostly because I had to pee and I didn’t want to stop anywhere because #COVID – haha).
When we got home, I made breakfast at 10:45 (love time stamps on photos – it’s the only way I can remember what I ate for what meal, ha!). Two eggs and bacon (three slices on the plate, one slice already in the belly!).
Since the sun was shining and I was feeling happy we decided to keep going and went for a run outside. Honestly, there isn’t much to do around here other than be outside these days! Especially when I was trying not to work.
Around 1:30 I got hungry and had re-vamped leftovers for lunch. I saw a friend post pasta salad on Insta this week and have been craving it. I took leftover pesto noodles, added arugula, salami, and cilantro dressing and it was GREAT.
A couple of hours later, I started to get bored so I decided to start cooking dinner. This way, I could just rest at night. I made this one-pot beef stroganoff and it’s so good.
When Marco woke up (he worked at night) he asked me to make him food, so I made him chicken taquitos and had one with guac myself (gave him the rest of my guac). Yum!
Here was the finished product just waiting to be garnished with parsley. Yum! Are you hungry yet?
I wasn’t that hungry when the pasta finished, but wanted to have some, so I made a small bowl. I put the rest of the pasta into separate containers so we have easy meals to grab through the week.
A couple of hours later I had some apple with almond and peanut butter. Yum! This satisfied a craving!
Sunday morning I woke up, played on Pinterest for a while, and laid in bed with M, sipped coffee, watched Cougar Town on Prime (so funny!)… and made breakfast around 10:00 am.
Sourdough toast, over-medium eggs, avocado, bacon, and arugula. DROOL. I’m definitely making this again today (Monday) because now I’m craving it! Soooooooo good my friends!
At 1:30 we were about to head to the beach to walk around and get some SUN, so I snacked on these leftover chicken taquitos before we left. I wasn’t quite hungry for lunch, but knew I’d get hungry at the beach if I didn’t eat.
Around 3:00 we came back home to a yard full of friends waiting. Hallelujah! We sat our chairs what felt like miles apart (haha!) but it was so great to see/talk/be with people.
I was hungry when we got home but honestly was so excited to see friends that I forgot to eat. A couple hours into hanging out I ran inside to snag a few bites of this pasta. I kept snagging bites over a period of a few hours.
Marco told me to bring it outside but I didn’t have any to share so I didn’t want to, ha! Snagging bites worked just fine.
Since I did eat the whole container into around 6:00 I wasn’t hungry for dinner. Plus, we were so filled up from time with friends that all we wanted to do was climb into PJ’s and head to bed. I had a couple bites of M’s ice cream (Talenti chocolate peanut butter – the BEST).
That’s it my friends! Now it’s Monday and so far I have:

And now it’s time to:
- Plan out the rest of the week
- Touch base with my assistant
- Answer emails from the weekend
- Check-in on business to-do items
- Eat that amazing breakfast sandwich!
Later on today I think we’re going to head to the beach again, even if just for an hour. That sunshine is doing wonders for the soul.
