Daily Eats: The BEST Breakfast in the Whole Wide World
Okay… we ALL know that I love my eggs and toast, but this breakfast that I’m about to share makes my mouth water… It happens every time: I take the first bite & my immediate reaction is to smile big and say “yuuuuuuuum!”
The breakfast I started yesterday with was…. flax plus waffles with honey greek yogurt, raw almond butter, and organic peach slices… YUMMM! There’s a tiny smear of Kerrygold butter on the freshly toasted waffle as well. Seriously ladies, this is divine.
I started my day with a super easy & calm walk/jog followed by some floor exercises at home. It’s in the 80’s here, and being in a muggy gym sounds no good. Outside in the sunshine? Yes, please!
After breakfast I cleaned up, got myself ready, and started work from my DIY standing desk. I love this stand that’s allowed me to do work from my laptop as I stand. I hardly want to sit at my desk now.
Believe it or not, I actually feel more productive and focused when I stand. I always thought it would be the opposite.
I ate this small bowl of lentil soup for lunch (around 1:00)…
Note: I felt like I could go without lunch… I didn’t have any of my usual hunger cues like: a stomach growl, or slight nausiated feeling. I did notice that I felt slightly weaker and a little less focused (perhaps those are my first signs of gentle hunger that I sometimes don’t notice). Since I knew I still had several client sessions to go before I could eat again, I ate something small anyway – this bowl of lentil soup :). Usually I’d pair this with avo toast (it’s so good!), but as I said, I wasn’t very hungry. This turned out to be just what I needed to feel re-focused and re-energized for work. I guess those waffles really held me over!
Mid-day I walked to the grocery store. I was finished with office work, had a break between client sessions, and wanted to get outside (it’s crazy gorgeous here right now!). It was so nice to take a break from my computer and walk outside. I stood so much yesterday, and because of that I slept amazingly last night! I cannot say it enough – I’m so glad I found a way to not have to sit so much…
Before my last client session I enjoyed this dark chocolate. I wanted a little pick-me-up, and a piece of chocolate did just that. I also enjoyed peppermint tea during my session, which is so nice and calming.
For dinner Marco and I ate more brown rice, chicken, broccoli, and avocado bowls. See recipe here. We ended the day with: PJ’s, Royal Pains on Netflix, and some incredibly deep sleep…
