Daily Eats: Weekend Eating

Good-morning and happy Monday!

Today has been a good/weird day. I’m going to be honest, I opened up social media this morning first thing (something I try to not do) and it was cold and heavy. I mean, so many good and encouraging things… but then some super hate-filled, angry, aggressive posts.

Here’s whats hard for me about social media. In person, I can have great convos with friends. Convos that are full of love, seeing different sides of things, and all of those convos seem to have one goal: people sharing what they’ve processed, the best they can, so far. These convos are full of grace and love and trying to help one another understand different perspectives. But then I hop on social and it’s like a one sided war. People hating whoever doesn’t think just like them. (Not everyone does this by any means, but when I come across it, all I can think is “This is so not how my in person conversations have gone.”)

For this reason, I’ve really tried to keep the heavier and deeper convos to real life talks with friends and family.

I’m not against people sharing their opinions on social. Not at all. I’m not against people sharing what they believe. What I am saying, is that it can come across so differently online, when someone is sitting behind their phone… than it might in person. Where a loving conversation can happen. (I know in person blow ups can happen too.)

Anyway… that started my morning off a bit heavy today. Anyone feel this way?

In an effort to try and refocus and connect… I’m jumping in with a daily eats post to share the weekend with you. Turning on some music while I write this.

Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.

Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

Friday

Breakfast sandwich of two eggs, sourdough, and avocado. Plus a cutie on the side

Friday morning started off with a breakfast sandwich of two eggs, sourdough, and avocado. Plus a cutie on the side. After breakfast, I went for a walk with Abby and my friend Jess.

I heated up some veggie soup and topped it with avocado, sour cream, and half a slice of buttered sourdough toast.

Between calls I snacked on this apple and peanut butter (a friend of mine went apple picking and brought these to me – they are SO good and fresh).

Midday I heated up this Amy's cheese enchilada

Midday I heated up this Amy’s cheese enchilada. It tasted good but the cheese was too much for my stomach (I felt a bit nauseous afterward). Luckily, some OJ and rest before my last calls did the trick.

For dinner I had a ramen bowl with one egg and bean sprouts. This has been the thing that feels/tastes good lately.

We’re all out of ramen now, but when I go to the store next I may try and experiment with making my own (anyone have any tips on making the broth taste as good as the instant packets – I love that flavor!).

Saturday

Saturday morning started off with three eggs and toast. One multigrain slice, one sourdough end piece (it was my last piece of sourdough, so I made a multigrain slice too so it'd carry me over throughout my morning)

I got dressed I went down the street to our nearest Starbucks and ordered the closest thing I could to a "Nitro Cold Brew with Sweet Cream". It was a decaf americano with sweet cream (yum!).

After breakfast I showered and got dressed in cozy clothes for my Growth Vault call. Once a month we have a Zoom hangout which we call “Coffee Connection” time. It’s where a group of us jump on Zoom on talk through and support eachother through a certain topic. This week we talked about our intuition and following those gut feelings. Not holding back because of fear of what might happen. It was really great.

While in the drive-thru Abby was wagging her tail 100 mph and begging the barista to say hi to her (haha!). The barista asked if she wanted a "pup cup" and I said "what's that?" She told me it was a small cup with whipped cream.

I said “sure!” Abby was thrilled to say the least (can’t you see it in her photo?). She now loves Starbucks rides – ha!

I had the last of the veggie soup I had leftover, topped with sour cream, red onion, and avocado. (I also sprinkled a few Siete chips crumbled up over the top after this photo.)

When I got home from Starbucks we had our Coffee Connection call (it was so good!). After that, I worked for a couple of hours and then wrapped it up to eat lunch. I had the last of the veggie soup I had leftover, topped with sour cream, red onion, and avocado. (I also sprinkled a few Siete chips crumbled up over the top after this photo.)

This carried me through the afternoon as Abby and I drove down to Shell Beach and went for a walk. A little day date for the two of us.

So I heated up the last of this leftover pizza that I'd made on Monday night.

For dinner, made chicken enchiladas with green sauce. So yum! Also, rice and beans on the side.

Sunday

Sunday I woke up and had a cozy morning. Breakfast (two eggs, two slices of toast, and a cutie) and The Home Edit. Have you seen it yet? It’s good, but I’m still a bigger fan of Tidying Up by Marie Kondo. I just LOVE Marie! How about you?

An apple for snack

After breakfast I munched on this apple.

And, had these two cookies with milk. Simi and Alexis were both posting on Instagram about cookies and it got a craving started for me. I had these cookies with a glass of milk.

Chipotle order-I got a veggie burrito with black beans, brown rice, fajita veggies, guac, sour cream, cheese, and lettuce. YUM. YUM. YUM. We shared chips and guac on the side. And iced water with lemon (tastes so good lately!).

After breakfast I picked up my friend Bry, we grabbed Starbucks, and drove into SLO. We took Abby for a walk, dropped her at the groomers, and while we waited we went to lunch and shopping. Such a fun afternoon!

For lunch, we got Chipotle. It just sounded so good and boy… was it good! You know when you just get a really good Chipotle day? Everything was so fresh and tasty! After my California roll dinner I had a couple of these Smart Sweets to try. Bry loves them and told me I should try them since I like Sour Patch Kids. They were actually pretty tasty! When I have SPK’s I usually just nibble on a few each day. So these are fun to keep around to have something sweet/sour/chewy around.

So I went downstairs and made a small bowl of cereal so I could just get back to sleep. It did the trick.

The California roll didn’t hold me over long. I went to bed thinking “Ah, I should maybe eat something… but I’m too sleepy! I just want to sleep!” I literally prayed that my hunger would just go away (haha!). But, baby wants what baby wants. I woke up at 1:45 starving and nauseated because of it. So I went downstairs and made a small bowl of cereal so I could just get back to sleep. It did the trick.
