Ah, this has been a great weekend full of great friends, great food, and lots of fun – a photoshoot, pool days, walks with Abby, and cozy time at home. The sun is out and my heart is full.
Before we dive in, I want to remind you that these posts are NOT for comparison (if these posts are triggering for you in anyway, scroll THESE posts instead).
I share my eats in hopes that you’d leave here today feeling inspired and full of PERMISSION to listen to YOUR BODY, as I listen to mine. I hope these posts fill you with the FAITH you need to let go of ALL food rules/control (just as I have!).
If you want to apply what you’re learning here in these posts and become an intuitive eater as well, come join me in The Growth Vault (click here). I would love to coach you!
Friday morning started out with eggs, toast and work. I worked for about 4 hours (now that I have a team of 3 it’s become easier to get non-client work done in less time) and then wrapped up the day to spend the weekend with M.
At about 11:00 we headed out for the pool. This is the first weekend that the sun has been (almost) completely out. It’s beautiful today. The pool was super nice. We stayed for a couple hours and then walked home to have lunch and walk Abby.
For lunch we had leftover chickpea and sweet potato curry (so easy to make!) with rice and avocado. Yum! Want the recipe? Leave a comment and I’ll post it!
In the evening we went to Food Truck Friday with friends, here in Reno. It was the first time we’d ever been. It was a blast! Tons of people and TONS of food trucks.
So much to choose from! The boys ended up getting several different things and I nibbled on a little bit of each, like one of these chicken wings, a few fries, a couple bites of Chinese food, etc…
After Food Truck Friday we went to Coldstone, per my request. I wanted my old high school favorite: strawberry rendezvous. This is not a menu item anymore, but so far every employee has known what I’m talking about when I’ve asked for it!
It’s got: strawberries, strawberry ice cream, bananas, white chocolate chips and graham cracker crumbles. Yummm!
After Coldstone we went home, watched a movie and relaxed.
Saturday we woke up at 4:00 am to get ready and drive to Lake Donner with our friend Nichole. Nichole is amazing at taking photos and has just started doing so for a business. She’s AWESOME. She took our photos and we’re in love.
She captured our true personalities together and made us laugh, a lot! To me, that’s the best part of taking photos. Is having fun, feeling like yourself, and capturing it all on camera to enjoy for a lifetime.
It was beautiful and there was a stunning inversion over the lake. You can find Nichole’s photography page on Instagram: @nicholecollinsphoto.
For breakfast Nichole took us to Sierra Gold. SO. GOOD. Marco and I split this breakfast burrito with potatoes. It was the perfect amount and satisfied so well.
After breakfast we came home and fell back asleep for THREE HOURS. It was glorious. When we woke up I felt like I’d been hit with a truck (haha!) – I’m not a graceful napper. It was sooo nice to have nothing to do and just sleep. When we woke up I heated up curry and rice and topped it with avo.
After lunch we took Abby for a walk and then headed over to our friend Shannon’s house to visit her and her baby boy. We can’t get enough of him/them! Abby came with us and had a blast. Auntie Shan has a fun doggie toy-box! Abby was in heaven.
For dinner I made Marco and I ramen. It was so good! I used regular ramen noodles without the seasoning and added miso broth (instead of water), two cans of coconut milk, red curry paste, an entire bag of bok choy, green onion, egg and one box of thinly sliced mushroom. The recipe is adapted from my friend Jen’s (she doesn’t have it posted, but I did link her website!).
Sunday morning stared off with a LOVELY quiet time and bible reading with worship music playing in the background. After that I made Marco and I breakfast – two eggs on sourdough. Yum!
After breakfast I had a meeting with my assistant who is now training a second assistant to come on with us. I am so blessed to have such great girls on my team. They help make this thing go round!
After my morning meeting, Marco and I packed up our pool-day stuff and headed to the GSR (Grand Sierra Resort & Casino) where they were having their first pool party of the summer. It was a blast! So relaxing. I had Shock Top while we were there.
We also shared these fish taco’s. Each had one, shared the fries. They were pretty good, but not as good as they normally are (I have had them several times before and they were much better).
When we got home later in the day I wanted something to munch on so I made us loaded nachos to share. Chips, cheese, hot and sweet jalapeños, avocado, tapatio and sour cream. YUM!
We took Abby for a walk and hung out in the backyard for the rest of the evening until dinner.
For dinner I heated up leftover ramen noodles (the last of them). This was SO good. Even better the next day. Mmm! If you want more details on how to make this, just leave a comment and let me know. Happy to share!
To end the night we had milk and cookies. Chocolate chip dunkers from Trader Joe’s, to be exact. We climbed in bed after this and watched a movie before we fell asleep.
Today is back to work for both of us. It was a GREAT weekend. I’m looking forward to a great week ahead as well!
