Good-morning and happy Monday (and Columbus Day).
I’m here with daily eats from the weekend, Thursday through Sunday. It was a great weekend!
Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.
Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine alongside you.

Thursday morning started off with a GoMacro bar while working, with a cup of coffee. This is actually an old pic because I forgot to snap my bar 😉
Breakfast – After working a while, I had a late breakfast and munched on this BLAT with egg: sourdough toast, Organic mayo, eggs, tomato, romaine lettuce, avocado and bacon. Yummm. So delicious! Kept me full for a while, too.
Lunch – Later that afternoon I munched on a kale caesar salad topped with cherry tomatoes (see photo below).
Dinner – For dinner Marco and I split a tray of nachos: corn chips, ground beef (seasoned with taco seasoning, cacao, and oregano), jalapenos, onion, tomato (on my half only) and a blend of mixed cheeses. I ate less than half of my half.
Dessert – For dessert I had two “nutty bites” from Trader Joe’s. One would have actually been just perfect, taste wise. Physically, I felt completely fine having two.
Breakfast – Friday morning started off with a Complete Cookie while sipping coffee and working. These cookies fuel me so well before a run. After a couple of hours of work I took Abby on a run long and this held me over perfectly.
Lunch – After our long run I had just enough time to meet with my assistant, shower and get dressed, and run out the door to meet my cousin Haley for lunch at Yosh’s.
Yumm. I love Yosh’s. I ordered the “Cinque Terra” which is: roasted turkey, prosciutto, aioli, tomato bruschetta, lettuce, and provolone cheese on swiss onion bread.
This meal was SO delicious but sadly, left me with stomach pain the rest of the day. Grrr! It’s so sad when something is SO tasty but just doesn’t rest well with your body. Next time, I’ll try the GF bread and see if that helps at all.
Dinner – For dinner Marco and I went over to our friend Shannon’s house and had salmon on a bed of arugula with cherry tomatoes. This was such a GREAT combination. I had a glass of wine with it.
Dessert – And a dark chocolate PB cup to top it off.
When we got home later that night Marco wanted something more to eat so I heated up a plate of mini-taco’s from Trader Joe’s. That’s one of our favorite foods to have on hand when we just need a little something else in the evening. I shared some mini-taco’s and Cholula with him.
Saturday started off with coffee, the show “Single Parents,” and total relaxation at the house. I love slow Saturday mornings.
Breakfast – I made Marco and I eat two eggs over-medium and sourdough toast for breakfast.
After breakfast I headed out to our neighborhood gym for a nice run on the treadmill, dog-free. I LOVE running with Abby, but Saturday Marco took her for a skateboard ride. So I took advantage and ran inside where there was a heater (it’s cold here!).
Lunch – After my run I came home, showered, got dressed for the day and made myself lunch. Tuna salad over a bed of arugula with tomato slices and a tiny end-piece of sourdough with olive oil and balsamic.
Snack – A few hours later we were headed to Sacramento to meet up with Marco’s grandpa. On our drive there I stopped at a place in Truckee, CA called “Wild Cherries.” It’s a coffee shop with awesome food. I got a cappuccino and this half-wrap to hold me over until dinner (we had a few hours left before we were going to eat). This wrap has pesto, turkey, provolone, tomato, lettuce, and pesto. Sooo good!
Dinner – For dinner we went to a place in SAC called “Centro.” I wasn’t super hungry so I ordered a happy hour meal of 3 small street taco’s. This was perfect and held me over. I also had a “Paloma” with grapefruit to drink and a few chips with salsa to munch on.
Here we are visiting a hotel called “The Sawyer” in SAC. Pretty cool! We went up to the rooftop bar to hangout and have a drink. Since I had to drive home, I just had water/ice. Or a “blue dolphin on the rocks” as my friend Jenn calls it ;-).
Again, later that night we made a plate of mini tacos to share. We didn’t quite want dinner but it had been about 5 hours since we ate at Centro. So we snacked on some tacos.
Sunday morning started off with half of this banana before Church (I wasn’t into it – it was too ripe for me).
Brunch – After Church we had a bunch of friends over and made brunch while we watched football. We made bloody marys and breakfast burritos with egg, bacon, potatoes cheese, and salsa. I added picked jalapeños and onions to mine. Yum!
After hanging at the house we went to Need2Speed in Reno and did go-kart racing. It was so fun!
Dinner – On our way home we stopped at Chipotle with friends to pick up dinner. I ordered a chicken burrito with brown rice, pinto beans, pico, sour cream, cheese, and lettuce. Sooo tasty.
Marco and I ate our burritos while cozied up at home, in our PJ’s, on the couch, with trays and the show “Single Parents” on TV. We’ve been loving that show!
Relaxing with my husband at the end of the night was the perfect way to end a Sunday. Such a fun weekend with our friends!
