This afternoon at my babysitting job, I snacked on fruit!
Amazing! Fruit?! The past couple months I have been choosing mini muffins, peanut butter balls, chips (+ cheese and salsa sometimes), crackers and cheese…. no wonder I needed this time to give my body (and appetite) a break!
I sat down after cleaning up the house and pulled out my book, “Wheat Belly.” It’s packed with info, so it’s taking me a while to read. Good book though!
A couple hours later when I left, I had about 30 minutes to kill, so I stopped and had a Soy Latte with my Peanut Butter Cookie LARABAR.
I didn’t want to drive back across town before I picked up Griffin, so this seemed perfect. It was 🙂
A little while later when I got home, I snacked on a little more fruit. Pineapple and blackberries. Yep, the pineapple is now gone! I’m going to have to go buy more immediately! Pineapple doesn’t last long in my house 😉
A while later I was hungry again and still had a while to wait until my Dad got home. He made us homemade lentil soup tonight, and it still had a couple more hours to cook! To hold myself over, I had a good handful of carrots with hummus.
By the way, this is White Bean and Basil Hummus from Trader Joes- YUM!
And last but NOT least! Finally, dinner! SOOO sooo SOOO good.
Under the soup was one small potato with about 1/2 tbsp. of butter spread around on it…
The soup went one top and oh my… seriously this was amazing.. I feel very lucky to have a Dad who cooks so much! Especially one (well, both parents actually!) that are doing this challenge WITH me!
I understand that this challenge may feel a little bit easier to me than others of you because 1) I have done it twice before, 2) both my parents are doing it with me, and 3) my Dad is cooking tons of food that I’m able to eat. I would just encourage you all do try lots of different things. Whatever you can think of! If you need suggestions, feel free to write me! I’d be happy to give some. I hope that you’re all doing great!
I have a treat for you later, but for now, I am off to the gym! 🙂
