DAY 22: Someone tell me about Quinoa!?

Good evening everyone! Hope you all had a great day! Again, it was a bit of a stressful Thursday! The beginning of the day is always great until Physiology Lab comes, all my parters & myself are starving, and are just ready for the weekend. We all can’t wait to get out of that class!

Well, at least my day started and ended beautifully! This morning I woke up at 5 to have my quiet time. Look who decided to join me today!

After reading a while a while I sat down and listened to music while I journaled for a while. I absolutely loveee my journal! It’s funny, my journal is filled with so many happy things and FULL of gratitude and prayers. Most of my old journals were not like this… because I only wrote when I wanted to complain or “get it all out.” Now, for some reason I don’t EVER feel like journalling when I’m sad or stressed. My favorite time is when I’m happy and thankful. I actually get encouraged reading through it!

I also picked up this book from my bookshelf this morning to refresh myself on a few things. I LOVE this book! SO many cool, natural, TOTALLY healthy tips.

I noticed that this lady, Gillian McKeith says that Quinoa is a VEGETABLE PROTEIN and LOOKS LIKE a grain. Does that mean it IS NOT a grain?! Because if not… BRING ON the quinoa! Someone tell me!

In my backpack today I packed a Lemon LARA and a back of Peeled Snacks (apricot)! Love them! I usually DO NOT like dried apricot either, so I was a little hesitant about this one, but it turned out great!

For breakfast this morning I met my cousins at Eggs ‘n’ Things. It was so good, as always! I had to turn down the crepe that they always bring you to start off with 😉

I got an egg white, veggies omelet, and potatoes with onions and bell peppers. Mmm mmm good! I ate my whole omelet and the majority of my potatoes. I probably left 1/4 of them… they were delicious 🙂

After breakfast I had some time to kill before class, so I went over to Barnes & Nobles and picked a few things up

To drink: non-fat tall Pumpkin Spice Latte for fall! Mmm-mmm! Yes, sugar, but not candy. This is a 100% fall necessity. Nobody is allowed to argue this one 😉

From the shelves: my new journal, since my current one only has a couple pages left. Isn’t it cute?! Also, this book “The Human Body” has SO MUCH amazing stuff about our bodies inside, it goes PERFECT with my school, and it’s so interesting! It’s my new bedtime story book 😉 (JOKING!)

For dinner I had split pea soup (the whole can) with a few ounces of canned turkey inside. In this picture I put the pepper plant on top, but after the picture I took a TON of my Dads homemade salsa and mixed it all up. To say the least- it was GREAT! It was very spicy, but I LOVE spicy, and it tasted almost like a soupy caserole… wait.. that doesn’t sound very good… haha, but trust me, it was good! My favorite is actually canned tuna in Split Pea soup. Don’t ask why, but it’s just so darn good!

This is how Kayla and I hangout! When your best friend lives too far to go see her everyday, you hangout over skype! We drank our tea together, talked about life, caught up, and painted our nails 🙂

I love how we are able to make that work. My best friend means the world to me, don’t know what I’d do without her! Love you K!

Alright guys, time for me to go to bed! I’m waking up at 5am to drive to Santa Barbara for coffee. Call me crazy but I’m going to take my day off, and drive my quiet time up the coast to a little coffee shop! Hehe, I thought about it and just decided, yep! I’m doin it! 🙂 Goodnight! Sweet dreams! And ps you guys… I don’t usually “edit” my blog posts, so if there are errors, I’m totally sorry! I know this is super “un-professional,” but heck with it… I don’t want to be professional.
