Delicious {Daily Eats}, and Two Great Days :)

Good morning everyone! How are you all doing today?

Here are my Monday + Tuesday Daily Eats 🙂

Ezekiel Bread with 1 egg

Monday was a great day. I woke up, had quiet time, and made a breakfast that felt super healthy. Ezekiel Bread with 1 egg. I left the butter off the bread.

Matcha Tea

After breakfast, I made myself a nice Matcha tea and headed for a walk at the park with just myself and my Podcasts.

Salad with balsamic and olive oil with brown rice, tomato, sautéed mushrooms, and liquid amines on the side

After my walk, I came home, got ready for our pre-marital counseling Session and made Marco & myself lunch.

Salad with balsamic and olive oil with brown rice, tomato, sautéed mushrooms, and liquid amines on the side. Yum! So good, and again, this felt so healthy!

Matcha Tea with Soy

After lunch we met up with our Officiant and Pastor, Mike. He is doing premarital counseling with us. He’s so real, and down to earth… hence the reason I look forward to our Sessions with him.

While we were at Coffee Bean, I ordered a Matcha tea latte with soy. Note, at CB they use sugary powder, and not a real tiny scoop of pure matcha tea. I didn’t know this, but always wondered why theirs seemed to be so much sweeter than other places. I always ask now, because I love the flavor of just soy milk, Matcha tea, and maybe some water – unsweetened.

Bean Dip with Fritos

After our meeting we went home and I made Marco bean dip with fritos. I wanted a little bit myself, so I had a petite treat size. This is the best bowl for tasting 🙂

Two cubes of bread with a little Lentil Soup

After that, I worked from 2:00-6:30pm. At 5:00 (our lunch was early, like 11:00) I was hungry, but didn’t want to rush and eat dinner, so I had a tiny version of what we were having for dinner. Two cubes of bread with a little Lentil Soup. Petite treat size 🙂

I also had a little apple.

Bowl of soup, toasted baguette with olive oil, and avocado

My actual dinner was at 7:00, and I got to spend time making it and putting it together. It was so good!

My Dad made the lentil soup. I got out a fresh baguette, sliced it really thin, placed the pieces on a baking sheet, brushed them with olive oil, sprinkled them with sea salt, and broiled them on both sides. While they were broiling I thinly sliced avocado to lay on top of the bread. As you can see in the photo, I have a bowl of soup, toasted baguette with olive oil, and avocado. I had all 3 flavors in each bite… soo good!

Yogurt, banana, and almond butter

Tuesday morning started with Yogurt, banana, and almond butter. I was really craving dairy, so I allowed myself a small bowl of yogurt to listen to my body.

I had another awesome morning on Tuesday. I got distracted from Quiet time when I went to open “just one email.” I so know not to do that 😉 BUT, I ended up getting to email a lot of women who I wanted to contact, and that was a great feeling! I had such a productive morning, and that left me feeling totally ready to take on the day.

tea with coconut cream & agave

I also tea with coconut cream & agave. My current favorite combo.

After breakfast, I headed out for a long, one hour walk with just myself and TED Talks. I’ve been loving these walks!

After my walk I found myself at the bank for 2 hours working on my Business.

Little cup of home-roasted peanuts

My banker was so sweet! She offered to run across the street and buy me lunch because things were taking a while. I declined, and instead, she brought me a cup of water and a little cup of her home-roasted peanuts. If you ever need a nice banker, ask me for her name… she’s the sweetest!

Soup with a baguette and avocado

When I got home from the bank I had to work for 2 hours. At 2:30 when I had a break, I made lunch. It was a repeat of Monday nights dinner, and boy was it good! I love yummy leftovers.

Broccoli, baked sweet potatoes w/ brown sugar, cabbage/raisin/pear salad, and broccoli

Dinner was at 6:00 last night between Sessions. My Dad made broccoli, baked sweet potatoes w/ brown sugar, cabbage/raisin/pear salad, and I made broccoli for us because I was craving it. Yum! This was another great dinner.

Okay y’all! Well, I’m headed back to work! Hope you guys have a great day, and I’ll see you back here tomorrow or Friday morning for another post. Stay tuned for my next Newsletter, and make sure you’re signed up!

Petite Treat Bowls

For those who were wondering, here is reference photo for the size of my petite treat bowl. The first bowl is a completely normal sized cereal bowl. The second is the bowl that I used for my yogurt the past two mornings (and what I usually use for Cereal). The third is the Petite Treat sized bowl.
