Delicious Oatmeal ♥ Flourless ♥ Cookie Recipe

Hello everyone! I hope you’re all having a great day!

Here is the recipe for the cookies my Mom made yesterday.

She makes them all the time, and my friends and I love them! This time, she added less sugar, and I thought they were still just as good! So, if you want to lighten up, I recommend you only use the 1/4 cup cane sugar (they were honestly amazing just like this!!). If you want them to be more sweet, like my Momma, use the full 1/2 cup sugar. This recipe makes 32 cookies*

Ingredients:

  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • 1/4 cane sugar (1/2 for regular sweetness)
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups Oat Flour (directions below)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups walnuts
  • 3 1/2 cups Old Fashioned or Coaches Oats (not blended)

Method:

  • Heat oven to 350
  • Mix together- melted butter, brown sugar, cane sugar, eggs, and vanilla
  • Next add 2 cups of oatmeal to a blender and blend until looks like oat flour- pour into a separate bowl
  • Add 1 tsp. baking soda, 1 tsp. cinnamon, & 1/2 tsp. salt to the blended Oats
  • Now stir both mixtures together in one big bowl
  • Finally, stir in 2 cups chopped walnuts (or 1.5 depending on what you like) & 3 1/2 cups of Old Fashioned or Coaches Oats (not blended)

  • Roll balls of cookie-dough and set on parchment paper (on a cookie sheet)
  • Flatten the balls if you want them more crispy; leave in little balls (maybe 1.5 inch) if you’d like a more fluffy cookie

  • add a few white chocolate chips on top (just for me, please???) 😉

  • Bake for 18-20 minutes (20 minutes for crispier cookie- like the photo)

In this picture: the ones in the back are ready to go in the oven, and the ones in the front just came out 🙂
