Healthy HITS the Spot

I was driving around town today thinking of my blog name, and why I created it.

I truly love healthy eating! I have come to the point where nothing tastes as good as healthy food does. And my favorite foods from before? I still eat them, I just make them better! I am reminded of this time and time again when I eat things like tonight – cheese pizza. Yea, it was good. But not nearly as good as a home made pizza pied high with all of my favorite veggies. Once practiced for some time, healthy eating is entirely enjoyable!

THURSDAY

Thursday morning, I set my alarm for 5am. My alarm is my phone. My phone, well, it struggles. The speaker only works half the time. Needless to say, I woke up at 6:15. Instead of throwin’ in the towel for a workout, I grabbed my Coffee, changed into my walkin clothes, and went for a 40 minute walk straight out my front door 🙂 It was soo nice!

When I got home, I opened up the slider and did abs, stretching, and leg exercises with fresh air. Squats and arms too 🙂

After that, I sat down and enjoyed the other half of my Coffee 🙂

I keep this sign on my desk to remind me to do things in life because I want to do them. For example, I want to live a healthy lifestyle. It makes me feel great! My counselor is helping me to balance out life in this way 🙂

For breakfast, I made an egg white omelet with bell peppers, parmesan cheese, broccoli, and pesto. It was delicious! Seriously, best omelet I’ve had in a while! On the side, I had a slice of Ezekiel with organic earth balance.

Lunch: PB&J + apple sauce… I’ve totally been craving PB&J’s lately!

During my health coaching Session, more green (I know, it’s purple!) smoothie

Dinner: a sweet potato with a little bit of greek yogurt, baked brussel sprouts, and a spinach and chickpea veggie patty!

sweet potato – washed. brushed in olive oil. sprinkled sea salt. wrapped in foil. baked at 350 about an hour.

brussel sprouts – put in baking dish. brushed with olive oil. sprinkled 21 seasoning + sea salt. added a little lemon.

patty – stuck in the oven while the brussel sprouts cooked. about 20 minutes. simple!

FRIDAY

This morning I woke up at 6, had my quiet time, and then went to a Step 2 Class! Love those classes! I always get the best workouts Friday, Saturday, and Sunday mornings when I do them 🙂

Before the Gym, I had more green purple smoothie (I swear, there are tons of green stuffed in there!)

Breakfast: overnight oats with 1/3 cup oats, 1 tbsp chia seeds, raisins, walnuts, goji berries, sunflower seed butter and coconut, a spoonful of greek yogurt, and almond milk poured until it covered all of the ingredients. I add more almond milk in the morning. Today, I also added a little bit of granola for crunch.

And three squares of dark chocolate nutty bites. Yum, I love these! But, they do leave me craving more, so I have to have a limit of 3 😉

My breakfast held me over very good. I didn’t get hungry again until about 6pm… Well, maybe it was the green smoothie or chocolate too… Or the fact that I kept busy totally cleaning my house, and then hanging by the pool 🙂

After the pool Marco and I went to Blenders. I got a small smoothie with peanut butter, soy milk, spirulina, and carob. After smoothies, Marco and I walked down to the beach and around downtown Ventura

When we were done, we stopped by my parents house. My Mom made a Costco trip earlier today and bought me these veggie pattys! Yum! Thursday night, when I had one for dinner, it was given to me from a lady I babysit for. She loves them, and wanted me to try one 🙂

While at my parents, I snacked on one, and Marco snacked on the other. Deeeeelish! That is tartar sauce and ketchup in the plate. My parents are now addicted. I have many ideas for what I can use these for!

My dinner was as healthy as it gets! I am babysitting again tonight, and the Mom bought a large pizza. So, instead of eating the super healthy, yummy dinner that I brought, I decided I’d snack on a piece of pizza and ruin my appetite 😉 I am no longer hungry, and have a headache. I’ll save the dinner I packed for lunch tomorrow 🙂

Tomorrow is an exciting day! A group of us are going out to LA to Celebrate my best friend Kayla’s Birthday! Pictures to come 🙂
