Grilled Cheese & Asparagus Sandwich? Yea!

Good afternoon everyone! I hope you’re all having a great day! I started off this morning super early, and have been very productive since- I’m about beat! See what a good start to the day can do? After the gym, which was excellent by the way, I came home and made my Dad & I lunch

Grilled cheese with asparagus sandwiches. Sounds crazy right? Well, it’s delicious!

To start, grab your frozen asparagus

In a medium sized skillet, boil just enough water to cover the asparagus. Once it’s boiling, add in the asparagus and let it cook about 5 minutes

While you’re waiting, get out your Organic Tomato & Roasted Bell Pepper Soup from Trader Joes, and put it in a microwave safe bowl and stick it in for about 3 minutes (depending on your microwave- or use the stove if you have access! I only had one burner available due to the kitchen being under construction)

While all thats going on, have your George Foreman Grill heating up, or a hot skillet on the stove. Always use whatever you have 🙂

Get out two slices of your favorite bread, toast them for about 2 minutes so they won’t get soft or mushy on the grill- that’s never good!

Take them out of the toaster, coat the Grill with a little bit of butter, and add some mustard of your choice to the bread.

Add your asparagus that you’ve drained/put a little bit of butter on, and one slice of pepper jack cheese (or whatever you have)

And you’re done! Put everything into fresh, pretty dishes, take a picture ;), and enjoy!

The combination of all these flavors together is so good, and it makes you feel good about eating a grilled cheese!

On the soup I added some sea-salt, fresh ground pepper, garlic powder, and a couple slices of lemon to flavor

So good! Take a little risk and give it a try 🙂
