Happy Monday!

I’m writing this post with a huge smile on my face, hardly interested in the food at all. There are such amazing things going on right now. I so wish I could share, but this is one of those things I just have to hold off on! You’ll all be informed in no time. Give it a few weeks 🙂

For those of you that are still interested in some of my weekend eats, here are a few!


Grilled Cheese with Daiya Cheddar, avocado, mild hot sauce, and toasted multi-grain bread


Split pea soup with the grilled cheese


Lots of apples! I’ve been loving apples more than ever lately. They’re great to have after a meal as dessert


Petite-treats of yogurt, honey, shredded unsweetened coconut, and slices of banana


Breakfast sandwiches


I’ve been having egg whites & 1 piece of turkey sausage cut down the middle (so it feels like two)


More breakfasts (Sunday) of eggs & sausage, but this time with 1/3 baked potato w/ butter


Shredded chicken tacos, and lots and lots and lots of Mexican Food!

Friday night, Marco and I went to a delicious Mexican food dinner. We ordered a burrito, and I ate about 1/3 of it, and had a side salad. Perfect way to get a taste of what I wanted and still be satisfied. Of course, I had chips & salsa too

The next morning, I went to a Mexican food brunch for my aunties Birthday! Happy 60th Birthday Auntie Rhonda! I got Chicken Villa and ate about 1/2 my food and boxed the rest for Dad to eat. I skipped the cheese and tortillas so I could enjoy some chips and salsa 🙂 Balance!

Last night, we had Lasagna, salad, and garlic bread + wine + cupcakes and ice cream. You can only imagine how I was feeling this morning! Swollen and stiff! I filled my plate like so: 1/2 salad, 1/4 lasagna, and 1 small piece of garlic bread. I dearly wanted seconds because it was so good, but I held of and split a cupcake with Marco and added a good ol’ scoop of ice cream on top. I dearly wanted seconds again, and I did not hold of. Another half a cupcake with Ice Cream. Oh my! It was extra sweet and extra good!


Here is a picture of me and my cousins last night + little Kingston. We had a great time! So happy Haley is home visiting from Humboldt 🙂


This morning Marco and I went to the gym from 5:30-7. It felt so good to move my body! I did about 35 minutes of Cardio, 15 min of Abs + Stretching, and about 15/20 minutes of Legs


I came home to a healthy breakfast to refuel myself. Black coffee (which I’ve been loving) and 1 piece of toasted Ezekiel with 1 tbs. of Peanut Butter and a small banana


After breakfast I had some quiet time, read my She Reads Truth, and journaled. Such a sweet way to start the day. Exercise, a healthy breakfast, the Word, and my journal.


To take babysitting, I packed 1 cup of yogurt with 1 tsp. of local honey, 1 cup of frozen berries, 1 pear, and 1 LARABAR

I’ll probably snack on an apple if I happen to find one while I’m working

[working now, and I found a hand picked apple! Definitely ate that one. So delicious!]


Also, I packed two bags of green tea to sip on through the day 🙂

Happy Monday everyone! I hope you all enjoy the day! I sure will. I had a great morning with my love, and time to myself, and now I’m working a 9-4 + a 5-10. I’m lucky I love my job 🙂
