Happy New Year!

Happy New Year everyone!! I hope you all were very blessed the first day of 2013!!

I started off the day hanging with family at Cafe Nouveau! Best way to start the year, I think! I even ran into Jade and Hailey, my two sweet friends that I haven’t seen in a few weeks (tear)

For breakfast, I ordered a Pesto and Veggie Frittata with wheat toast

I ate half the frittata and saved the rest. Sooo yummy!

Little Bella Bee was hanging next to me the whole time 🙂 I was feeding her water through a straw – she was definitely getting a kick out of that

After breakfast, Marco, Megan, and myself went to visit Haley and her friend Sunflower before they left back to Humboldt. Agh I’m going to miss her!

The rest of the day was soo much fun. Marco and I finished putting together the last of my apartment. It’s complete! We also went to the Gym and got a great workout. After the Gym, we walked to the grocery store to fill up my waters and get a couple of things for dinner. Garlic. Brussel Sprouts! I’m in love with Brussel Sprouts… he hates them…

I roasted them in the oven for 35 minutes on 400. I sprinkled them with sea-salt and pepper after tossing them in Olive Oil… Soooo good! I picked on them out of this bowl, and will be having leftovers in a salad today. Mmm!

For dinner, I made up chicken salads with lots of goodies.

Mixed greens, bell peppers, cucumbers, garbanzo beans, avocado, and garlic chicken that I had just cooked. I was teaching Marco how to cook Chicken 🙂 He asked me to start teaching him, and of course I was happy to!

I tossed the salad in an amazing dressing of navel orange olive oil and peach balsamic! It’s from We Olive in downtown Ventura. If you’ve never been there, gooo!!! They have so many yummy things! I got two olive oils and two balsamics, plus a dressing mixer for Christmas from Marco’s parents. So yum!!

Since I’ve moved out, it’s been really easy to save leftovers for lunches, dinners, and breakfasts too. The other day I threw together some indian leftovers from my brothers Birthday, and added 1/2 a piece of naan bread and half an avocado. Leftovers are sooo good!

I’m finding that since I’ve moved out I am eating so much better. Also, since I don’t have a microwave, I’m spending time cooking all of my food, and it’s helping me to appreciate it more. Taking the time to prep your food helps you to put more love into it. The more love that goes into your food, the more love that goes into your body. Sounds cheesey, but it’s true 🙂

I am loving my new place…. I can’t even tell you all how much!! Sooo much! Last night after dinner, Marco and I went in the Jacuzzi, and then watched Netflix. It’s so fun and such a blessing to have my own space… I’m so grateful..

Anyway, today is my Mom’s Birthday, and we will be going out to dinner again this evening! I’m staying away from treats, but will fully enjoy me some Chicken Villa 🙂
