It’s All Good (Gwyneth Paltrow’s New Cookbook!)

Today, I am posting Wednesday and Thursday eats, and announcing that I will not be on the blog/email this weekend. I’ll be on a relaxing trip with my Marco 🙂

Wednesday
Breakfast: green smoothie + about 5 nutty bites

We were there for about two hours. Maybe even a bit more! Marco dropped off a Soy Latte for me 🙂
Lunch: rice-cooker oatmeal with added blueberries + sunflower seed butter. I packed this to eat for breakfast, but didn’t feel like eating it until lunch

When I got done with work, I came home and cooked for about 30 minutes. I had gone grocery shopping a few days before and wanted to prep the food that I bought. I cooked some Kale, and sat down to a snack.
Broccoli + hummus, lentils + bruschetta w/ pine nuts, about 5 strawberries for a sweet treat.
A little bit later, Marco and I went for a 2 hour butt-kicking (seriously, I am so sore today!) hike.
On our way we had the bars we packed. Sorry this picture is so blurry! Bumpy car ride!
The view of Ventura from our hike was outrageous! It was soo beautiful in person!
After our hike, we stopped by Marco’s uncles house to pick up his truck. While babysitting Thursday, I discovered this shelf for sale. Ahhh exciting. I wanted this pretty shelf in my house. Now I get to enjoy it 🙂
For dinner Thursday night, I made us bun-less burgers with Trader Joe’s organic tofu burgers, veganaise, sauteed onions, avocado, and fresh lettuce from the Farmers Market
One the side, Kale salad with shredded carrots + pinenuts on top (this Kale had been cooked – I don’t enjoy raw Kale)
These burgers were good! They were very expensive, but good. I think it was like $5/6 for two patties 😮
After dinner, we went to Barnes and Nobles, and somehow on the way there my car veered into the shopping center that has my favorite frozen yogurt shop. I’m not sure how, but it did 😉
I got peanut butter + cake batter with dark chocolate chips and chopped peanuts

At B&N I bought Gwyneth Paltrow’s new cookbook! It’s all Good! And it really is! I’ve already made several things, which you’ll see in the following pictures.
Now onto Thursday
Breakfast: mixed cereals! 1/4 cup of each + a small banana and a few berries w/ coconut milk
- granola
- peanut butter panda puffs
- oat bits
Usually I bring my own food or breakfast, but Friday morning I didn’t have time. So, I enjoyed some of the food the kids were having 🙂
And of course, searched my new cookbook!
After babysitting, I ran to Trader Joe’s and got some ingredients to start digging into my new cookbook.
I also had to run into Target to buy a Grater good for Zesting.
And while I was there I got sucked into buying this bathing suit top! How cute, right?! Holding my hair up so you can see the blue studs 🙂 I love it! The best part – only $14!
I enjoyed this apple on my way to the pool with Marco between jobs – the wonderful thing about my Job is I get to do things like lay out and swim in the middle of my day 🙂
For lunch, we came back to my house and I made Scrambled Tofu (p. 47) and Go-To Black Beans (p. 275) from Gwyneth’s Book
While babysitting, I snacked on fruit. I had to take a picture of this snack tray that the parents lay out for the kids during the day. This is such a good idea! This saves the Mom from having to get snacks all day, plus, it gives the kids healthy options at hand
On my way home, I had a Larabar before Health Coaching
After Health Coaching, I made an ammmmmmmazing dinner! I was smiling through the whole thing! Marco loved it too. He said to pat myself on the back 😀
Roasted sweet potato (p. 152) + Lee’s Sriracha Salmon + Lime (p. 137), and a salad with Apple Cider Vinaigrette (p. 69)
All. So. Good.
Please, go buy the cookbook (cheap on Amazon – click link) and have fun with it! Gwyneth writes about her story in the beginning, and you can tell that she is a definite foodie, and has a great relationship with food. I love this! Her cookbook is filled with tons of healthy foods – mostly gluten-free, dairy-free, and many vegan options! She even offers meal plans in the back of her book. All you structured meal-planners would enjoy this!
For dessert, strawberries!
And the end the night, Marco and I watched a funny movie “What to Expect When You’re Expecting.”
And just to clarify, no! I am not expecting!! This movie just looked funny 🙂
