Living Room Re-do + New {simple} Recipes

Good morning everyone. I hope you slept great.
I had crazy, crazy dreams. Not good ones either. I had a dream that my Wedding was here, and on my Wedding day, I had forgotten to get a hair stylist, a makeup artist, bridesmaids, bridesmaids dresses, I left my Wedding Dress at home, I only had two hours to get ready, and Marco forgot about the Wedding. It was one of those mornings where I was so glad I woke up and it wasn’t true!
Yesterday started with a Green Smoothie. After a weekend of eating out I was really craving some home-made good, fresh food.
I had to be at work from 7:30-3:00 yesterday, so I packed another breakfast with me that I had around 10:30/11:00.
Fruit salad with a spin. This was so good!
In a to-go bowl, put your favorite organic fruits. I did cantaloupe, banana, strawberries, and kiwi.
In two smaller containers:
- plain, organic yogurt
- raw almonds, unsweetened organic shredded coconut, organic raisins
Mix it all together when you’re ready to eat. YUM!
Around 2:00, I had a Cashew Cookie Larabar to hold me over. I also packed a lunch with me, but I didn’t want to eat it until I got home because I wanted to enjoy my food in a calm environment. It’s no fun eating when you’re feeling stressed or overwhelmed. That’s the perfect welcome for a stomach ache.
When I got home, I enjoyed brown rice, chicken adobo, and avocado. This was leftover from when Marco and I ate it on Sunday afternoon.
After that, around 4:00, I had Green Smoothie and Green Tea while I Health Coached in my new living room.
Excuse the vacuum – we have no where else to put it. Apartments don’t exactly have extra storage ๐

And our TV, I think we are going to put it up on the wall. We want to be able to swivel it.
For dinner, I made exactly what I was craving. So yummy! Home-made fried rice and shrimp stirfry
As I was heating the rice, I thought… “hmmm… I wonder if I could make fried rice? I’ve seen them do it at the Teppan Food places… I should be able to do it!” So, I did. And it was good.
I already had brow rice cooked in the fridge, so all I did was heat a pan, pour some Olive Oil in the bottom (maybe 2-3 tablespoons?), and stir in the brown rice once it got hot. Then, I continued to add in some frozen peas. Once those were all warm, I made a little space in the middle and cracked the egg directly on the hot pan. It started to cook quickly, so I immediately stirred it all around. Viola! Fried rice.
The shrimp stirfry was also really easy. I just sauteed a bag of TJ’s stirfry, and added some frozen shrimp that I had just steamed. Dinner was cooked in about 20 minutes, and now we have leftovers for tonight ๐
After dinner, Marco and I walked at the park, and then spent some time in our Marital Counseling book.
Alrightly guys, I am off to do some more work, and then meet my Mom at the Park for a nice walk. See you back here tomorrow!
