The rest of the evening was minimal eats because I was so busy going to counseling, health coaching, and getting to my Gym Class. I didn’t have an actual dinner until about 9pm.

To hold me over between Health Coaching Session/Gym I had a Larabar and an organic apple

After the Gym, Marco and I went to Trader Joes and I bought some cabbage to use in place of rice. I’m experimenting a bit with grains and dairy right now.

I know this picture doesn’t look to pretty, but it was very tasty!

It’s True Thai Green Curry from Trader Joe’s on top of a bed of cabbage. It was so yummy that I am going to have it for lunch again today. I hope the picture is a little bit better 😀

For dessert, I had a few raw almonds and a couple pieces of dark chocolate in this cute little bowl.

The trick to enjoying a small dessert instead of a whole bar of chocolate is to eat slow, pay attention to your flavors, and appreciate yourself. Never, I repeat, never beat yourself up over anything.

Of course, I wouldn’t beat myself up over this little healthy dessert. But, if what you want is apple pie + ice cream, don’t feel bad about it! Get out your favorite little bowl, heat your apple pie, put a perfect scoop of Vanilla Ice Cream on top, sit down at your dining room table, take small bites, and really chew your food and taste the flavors. After you’re done, go watch a funny show with someone you love, or have a warm conversation with your best friend. This is so much more fulfilling than standing in from of the refrigerator, bingeing on apple pie and ice cream because you think you shouldn’t be allowed to sit down and enjoy such a “bad” treat (and then beat yourself up afterwards). You should be able to enjoy a treat if you really want it. Just do it with a loving attitude!

Okay, enough of that 🙂 The point is, no matter what, love yourself and you will get much further ahead in your healthy living journey. It’s the most important factor in living healthy.
