Meal Plan #3: Lemon Garlic Tilapia

Good morning everyone! I know there are quite a few of you excited for today’s recipe. Hope you enjoy it!

I wanted to start this post with a photo from today. I met my friend Aubrey at the beach to walk and trap coffee.

This was such a sweet way to start a special day. I get to pick up my Wedding Dress today!

The Wedding is 3 weeks from today.

Breakfast

Yesterday started with eggs & toast with my Marco.

Mid-Morning

I went to a Body Works class at 8:30 and then came home to do some food prep.

While everything for dinner was cooking I threw together a salad of romaine, lentils + bruschetta, and pine nuts. I made my own dressing with: 1 shallot, 2 cloves of garlic, 1/4 cup olive oil, and 1T. balsamic, and 1t. of dijon mustard + s&p. All in the food processor until smooth and creamy. I only needed to use a couple fork-fulls of dressing. It had a real kick to it — delicious!

Lunch

At 1:00p after I had finished all of my meal prep and getting ready I sat down to eat again. My salad held me for about two hours.

This meal was quinoa, chicken, and asparagus. While I was cooking dinner (fish) I also baked some chicken to make lunches for Marco and I. I put Tamari on top of this little bowl and was good-to-go.

I finished my lunch of with a Petite Treat. One of Moms chocolate pecan cookies. Heavenly! I was really craving this cookie. My body felt good after I ate it. Like I gave it just what it wanted.

Mid-Day

Later in the day I had a snack of one organic apple with PB.

Dinner

Dinner was Lemon Garlic Tilapia with Quinoa + Asparagus. Yum! Tamari on top — I’m a soy sauce girl, can you tell?

  • 2 Tilapia Fillets
  • Butter
  • Lemon Pepper
  • One Lemon
  • Garlic
  • S+P

Preheat oven to 375. As your oven is heating, spray a baking dish with non-stick spray (I used canola). Rinse the tilapia fillets (defrosted if frozen), pat them dry, and lay them in the dish. Melt some butter (size of two thumbs). Pour it over the top. Brush 2 minced cloves of garlic over the top. Sprinkle with zest and juice of one lemon, add S+P. I used lemon pepper. Bake for 30 minutes.

ENJOY!

This was so simple! I cooked my quinoa and asparagus as the fish was baking. I did this in the morning while listening to music since I knew I wouldn’t have time to cook dinner. I enjoyed this!
