My Favorite Weeknight Dinner Recipe (Cheap, Fast, & YUM)

Today, one single meal is getting all the glory. A full post. It’s my favorite weeknight dinner. It’s inexpensive, easy to make, and great for busy workdays. You cook it once, and enjoy it 3-6 times depending on the size of your family.

Marco and I are a fam of two and get three meals out of this dish. If you eat like a birdy, you might get four ;). We like our bellies to feel cozy and slightly more filled in the evenings (not to be confused with stuffed).

First, I turn on the rice. It takes the longest. I cook the brown rice according to whatever the recipe on the bag calls for, and I almost always add a little bit of olive oil for a creamy texture that I just LOVE!

Most of time I cook the entire bag of rice (about 3 cups dry) and save the leftovers to eat throughout the week with lunch foods. It makes my life easier, and I’m always up for that!

While the rice is cooking, I sauté about 1 lb of organic chicken breast tenders in olive oil & butter – let’s call it a Tbsp. of each. I season the chicken with only the simplest: sea-salt and pepper.

The last thing I do is steam one 1 lb bag of frozen broccoli florets.

The chicken and broccoli finish before the brown rice, so I toss them together in a giant glass dish. This time, I threw in a little 21 Seasoning Salute from Trader Joe’s. Just for fun :).

Once the rice is finished, I mix it in with the chicken & broccoli. You can’t go wrong with how much of each you add. If you love carby foods, add more rice. If you love chicken 10x more, make your chicken ratio bigger. Seriously, you’re not going to mess this one up. It’s easy-peasy.

I serve this dish “bowl-style” (I just made that up, but you get it, right?) and set out condiments on the table. When serving, I top with chunks of avocado. Holy. Yum.

Simple, Fast, and Healthy Dinner Sauce Toppings | soy sauce, Sriracha, and hot-hot-hot chili paste.

Last night I set out: soy sauce, Sriracha, and hot-hot-hot chili paste. The little jar is my favorite… who else loves the “little red jar,” as I call it?!

It’s fun letting each person in your fam pick their own toppings, especially if you have picky-eaters.

There are so many variations available for this dish. You can use tofu in place of chicken. You can add black beans. You can change the vegetable… Use this recipe as a base and go wild! Have fun with it, and don’t allow cooking at home to be complicated – it doesn’t have to be!
