I wish I were laying by the pool, but just doing nothing is sufficient for me after a long week!
You know what I’d really like to do? Go & pick up The Hunger Games Series, because I have heard nothing but great things about it! Have any of you read it?
I have a little treat for you all this afternoon, which was my lunch today! Yogurt Oat Parfait!
This is similar to Overnight Oats, but its ready immediately, and tastes more like Yogurt than Oats
(Full disclosure- Before I ate this I snacked on my other two little pancakes that were leftover from the recipe this morning)
- step 1: in a food processor, grind 1/4 cup Oats (desired consistency shown in picture)
- step 2: add in about 1/2 cup yogurt, 1 tbsp. chia seeds, 1/3 cup almond milk, and 1 tbsp. Sunflower Butter
- step 3: put in your favorite mug/cup/bowl and layer on toppings
I used one plum all sliced up, 1 tbsp. shredded coconut (unsweetened), and 1-2 tbsp. gluten-free granola
See, doesn’t that look like Overnight Oats? 🙂
