Perfect Fall Cup Of Coffee

Good morning beauties!

As I’m sitting here typing to you, I am sipping on such a good cup of dairy-free coffee. If you didn’t see yesterdays post, I’m aiming right now to have less dairy and gluten for my knees–they’ve been giving me trouble lately. So, you better believe that when my friend Simi shared this amazing recipe in one of her WIAW Post’s I had to try it. I couldn’t wait until tomorrow to share this with you.

I just made one tweak: cinnamon –> pumpkin pie spice because I was out of cinnamon. Both are great for Fall, and I’m so thankful to Sim for sharing her recipe!

I used: about 2 cups of brewed coffee, 1T of coconut oil, 1/2 cup of unsweetened plain almond milk, and a few shakes of pumpkin pie spice. All put together in the blender for 20-30 seconds. It makes it frothy too 🙂

Three corn tortillas with two eggs divided evenly and dipped in Dad’s homemade salsa. Mmm-mmm, good!

I took the day off from exercising yesterday and ran errands in the morning instead. While I was out I visited Mom & Dad and enjoyed this vegan cookie with black coffee. Definitely not gluten-free. I was distracted by thinking “oh, this is dairy free!” Even so, it was very yummy and so fun to visit.

Lunch

They sent me home with their leftovers, which I am never mad at. I enjoyed this brown rice pasta packed with veggies, pesto, and their leftover chicken villa (my chicken villa recipe here). Yum, that was good! I swear, anything they touch turns to magic!

Afternoon

To get me through the workday I made “Paige’s Favorite Green Smoothie” with only water, we didn’t have any almond milk.

Look! I filled a frame! If you saw any of our Wedding photos, this frame has been blank since we moved in. Here, let me share a Wedding photo for you! This is the boys getting ready at our house.

Confession: I’m really bad at filling picture frames. Next step, order Wedding photos and fill it with those! For now, engagement pictures/Wedding day memories will do. I love those photos anyway!

Anyway, after I was off work (6:45), Marco and I went to the grocery store. I needed almond milk, he needed Arnold Palmer Tea. While there, we passed the kettle chips. He bought jalapeño, I bought honey dijon. I was reading the ingredients and saw “turmeric” and said, “yep! Okay, this is a sign! I need these!”

Haha, story behind that: I am heading out this morning to buy a turmeric supplement to take each day for my knees. My friend Jen, who also has a blog shared with me that this has been helping her knees.

I enjoyed a small bowl of chippies while I cooked dinner. We ate so late (almost 9:00), but that was just fine with us. We were having fun 🙂

Dinner

After dinner we cleaned the kitchen and headed off to bed. I slept through my alarm this morning. Marco woke me up at 6:45 saying “did youuu sleep in?” 

Fact: I had a dream this morning that my alarm went off and I looked at it and it said “someone else’s blog post is going live on your blog this morning, you can go back to bed.” So, in the midst of that dream I must have turned off my alarm, believed that someone else would take care of today’s posting, and fallen back asleep. Haha! Can you believe that?! I woke up laughing.
