Pizza Pans Are for Pizza*, Not Cookies

Good morning beautiful!

I hope your day is off to a great start 🙂

eggs wrapped in corn tortillas

Yesterdays breakfast was eggs, corn tortillas, and salsa

apples with peanut butter and turmeric tea

My mid-morning snack was a small organic apple and a spoonful of peanut butter with Turmeric Tea.

Turmeric Tea: 1/2 tsp. of turmeric, 8oz boiled water, a few shakes of cinnamon, a splash of almond, soy, or rice milk, and a tsp. of honey. Yum!

shrimp stir fry and fried rice (homemade) for lunch

Lunch was leftover fried rice and shrimp-stir fry with sriracha sauce.

sliced kiwi

I had a few different snacks through the afternoon. Little/bad sleep the night before = body craving food for energy all day.

I had one kiwi (only felt like one of these). A handful of curried pumpkin seeds (SuperSeedz). Small bowl of Toasted Oatmeal Flakes.

The cereal was really just a craving for something crunchy and sweet while I waited for dinner to cook. Dinner was around 7:30.

brown rice chicken and broccoli

Dinner was garlicky chicken, brown rice with turmeric & chicken broth, and steamed broccoli with olive oil. So yum! This is truly one of my most favorite combos. I also love adding avo on top, but our avo wasn’t ripe yet.

To end the day with a petite treat – chocolate chip cookies. I ate most of this, and enjoyed it so much.

Girls… you have no idea what a fiasco making these cookies was… Ha! I bought a new round, great tray from Bed Bath and Beyond. Actually, it’s this one here. Let me just say… this is good for PIZZA. I was thinking “oh good, holes in the bottom will make really fluffy cookies.” WRONG. Holes in the bottom will actually make a super smokey oven and cookie drippings everywhere.

DUH! I guess that’s why they call cookie sheets: cookie sheets! *smack on forehead.* Side note: I’m not a baker. Haha!

I ended up patiently making the cookies five at a time in our little toaster oven on a regular, no-hole pan, and spent forever cleaning up cookie droppings. You better believe I was going to sit down and enjoy these two cookies after all that. HA! All that aside, they were super delicious.

I hope you all have a wonderful day. I will see you back here tomorrow, and also in your e-mail inbox for a short V.V.I.P. (very, very important persons) only post.
