Pleasantly Surprised by “Reduced Guilt”

Hello everyone! Hope you’re having a great day! Did y’all make lists/pictures/journal entries (whatever makes you happy) of where you see yourself in a year? Do it, and then put it away for a few months and look at it again. You will be amazed what happens when you follow your heart taking small steps & being thankful all along the way 🙂
Today I went to Coffee Bean with Mr. Kurt 🙂 We had such a good time catching up! You can see I was not so camera friendly today 😉
I got my favorite Vanilla Latte with Soy Milk & 1/2 the powder, and he got some Cherry drink…
I honestly can’t think of a better way to meet up with friends and catch up. I love love love Coffee (you all already know this), I love talking, I love being “out & about,” and I love love love my friends. This was a great afternoon 🙂
On my way home, when I was going to pick up Griffin, I snacked on this Lemon LARABAR. I got so busy that it had been about 8 hours since breakfast. Honeslty, I wasn’t starving! I must have packed a good amount of nutrients into that breakfast! That’s SO long for me to go without eating. Plus, I was pretty distracted 😛
Speaking of distractions… do I spy an iPhone? I do! This is what Griff talks to everyday when he gets in my car.
So nice to hear his voice! Haha 😉
While babysitting, I snacked on one of Mom’s Cookies and a plum. Num num num!
For dinner, I had this reduced guilt Baked Ziti from Trader Joes… I have to be honest- I was not really expecting this to be good.
I know it sounds terrible, but as I was baking it, I was thinking of titles for this blog post like “Reduced Guilt = Reduced Taste,” or “Reduced Guilt = Increased Appetite 20min Later”
I know, you’re probably wondering why I was eating this if I didn’t expect it to be good… Well, I bought it just to try it. I like to try pretty much everything, because often I am pleasantly surprised. I bought this along with a few other frozen food entrees for when I babysit. It’s so nice to have something I can just grab really quick before a job. Well, today I was supposed to babysit (didn’t end up happening because the little one got the flu- poor thing) so I had this with me and needed to cook it when I got home because it unthawed
It actually ended up being really good, and was a really good size portion! Appealing to my eyes!
In the container, it looked boring and mediocre, but when I put it on the plate and added broccoli and avocado, it suddenly looked great!
I am surprised but happy to say that I’d definitely buy this again!
I loved the broccoli with avocado! Such a good, random combo!
I boiled the frozen broccoli florets for about 10 minutes, drained the water, and added-
- splash of EVOO
- garlic powder
- sea-salt
- ground pepper
Turned out to be a great dinner! And for that matter, a really great day! And guess what is on tonight? The Bachelor! Who is watching?!
